My mother died when I was 4 years old, she was born in chihuahua Mexico 🇲🇽 so I learned only a few things from my dad, and watching you is like having my mother with me when I cook, even though you are not old enough to be my mother you are a mother to all in your amazing heritage and I would love 💕 to thank you 🙏 and your amazing way that has completely helped me with my recipes, I have the basic instinct to a lot of cooking but you have filled in a lot of holes I had no idea how to prepare many great dishes, again thank you 🙏 I know your family appreciates you your a great mom and wife.

My grandfather was born in Chihuahua too. I recently found her channel and I just love it. Yesterday I made flour tortillas for the first time since my grandmother showed me. It brought back so many memories and made me feel like my grandmother was looking down on me smiling...and telling me to turn up the music 😄

I add just a little brown sugar to my homemade enchiladas sauce Start with a table spoon and if you don’t don’t like it that sweet you can do 1/2 tbs

You did not say what the oven temperature is. Other than that this is a very helpful video and I can’t wait to try the recipe. however I never use bouillon cubes. you can just use chicken stock instead of water and get the same affect.

I think it is absolutely critically important for SONS to learn how to cook from their Mothers. Not only that, I promise you, these will be memories they will treasure in years to come. Some of my fondest and most cherished memories are of puttering around the kitchen watching and learning from my Mother who we lost this past Oct at the age of 88. I never realized until later in life how much I gleaned from watching and doing simple things-things she patiently allowed me to screw up, then gently showing me the correct way to peel potatoes, wash rice, dice an onion, etc.

I enjoy your recipes and videos. I miss my cousins Mexican cooking. You are making yours like she did. Her Spanish rice had fried bacon, potatoes, and rice. She put cilantro,chili powder ,tomatoes diced,and some tom juice.she had other spices like peppers that I can't have because of allergies . Thank you for sharing your recipes.

Your boys are absolutely adorable, and the enchiladas look amazing! A friend of mine had taught me how to make it a long time ago with dried chiles the really giant red ones. I think they were maybe poblanos or are they anchos after they're smoked? or something I don't remember. She was from New Mexico and instead of rolling them they layered them. Dip the tortilla in the red sauce, add a layer of meat, cheese onions black olives, then another tortilla and just stack up two or three layers like that and then top it with the lettuce and tomatoes and sour cream. They were so amazing and yours look just as good. So now I'm off to look at your chili powder recipe. Because yeah there is nothing you can buy in a store that compares to making your own. Thank you for all the time and effort you put into these videos!

They are New Mexico dried red chilis, usually very hot & yummy (NOT Poblanos or anchos), they are especially grown in New Mexico. Just the ripened & dried version of green chilis. Seeds can be found in packets, "Big Jim New Mex' is one variety. You can buy the dried chili powder, much easier for sauces. I was taught to layer them, & often we had a fried egg on top. I was born in New Mexico, as was most of my family, we're Spanish, not Mexican, but adopted much of the cuisine south of us

I’m going to make these today! 😋😋😋. When I make enchiladas with corn tortillas, I always fry them till golden, then soak them in the sauce to soften a bit for rolling up. The added frying step also really adds flavors to the tortillas.
