13 Quart or larger pot
enough foil to cover pot
Ingredients to FEED 20+
10 cups Long grain rice
13 cups warm water
10 tomatoes
3 medium onions
8 garlic cloves
1 1/2 cups of tomato bouillon
2 or more Jalapeños or serranos for spice
1 stick of butter for added flavor
3/4 cup of oil
Optional:
2 Tbsp white vinegar (read tip below)
1 1/2 Tbsp ground cumin
Vegetables of choice such as peas, carrots, or corn
Ingredients to FEED 10+
5 cups Long grain rice
8 cups warm water
6 tomatoes
2 medium onions
5 garlic cloves
1/2 TBSP of cumin
3/4 cup of Tomato Chicken bouillon
1 or more Jalapeños or serranos for spice
1/2 stick of butter for added flavor
1/3 cup of oil
Optional:
1 Tbsp white vinegar (read tip below)1 Tbsp ground cumin
Vegetables of choice such as peas, carrots, or corn
TIP❣️
If you are making this for future use ADD white vinegar at the same time as blended ingredients. This will help preserve for around 6 months if frozen and about 7 to 10 days in the refrigerator 🥳
For the BEST presentation use basmati rice and adjust the water as suggested on the package

My mom used to make pork chops and Spanish rice in the oven all the time! OMG IT was Sooooo good because the chops would bake right on top of the rice and the juice from the chops would help season her rice....I love this recipe thank you ❤

The toasting of the rice is such a beautiful memory of being in the kitchen with my beloved grandma. She's the one who always took the time to patiently show me how to do it, and foil is a MUST...my favorite part was fluffing the rice with that beautiful tomato gravy at the top! I inherited her pot when I hot married...Great job friends💪🔔🫶

This looks so good! I always use tomatoe chicken bouillon or the blended veggies for my rice, but I didnt think to use the blended tomatoes, onion, and garlic AND the tomatoe bouillon. Making this today!! Also, baking it is genius. Im always one of the holiday cooks in my family , and this will free up burners 🎉

Love this method! When I wash the rice ahead of time (like night before), how do you recommend drying and storing it for the next day? Air dry in a strainer? I'm worried it might stay moist.

You can lay the rice flat on a baking sheets!! The air in the environment should help dry the rice 💖

I can’t wait to try this, just got a 13.25qt Le Creuset pot, was thinking it was half the size. Guys, it’s in the oven and the suspense is killing me! 😂😂 I usually mess up Spanish rice cus I put too much water, I am Korean so we do sticky rice. I’m so thankful for the oven technique cus I never get it right lol thanks for posting!

It came out perfect!!! I didn’t have the tomato chicken bouillon but regular chicken worked, tasted a lil lighter but I like it too. I guess I could have added a can of tomato sauce? What do you think Steph?

from personal experience, there is no comparison to making-a traditional rice recipe with brown rice. (70yrs old & a former & original chicana granola girl mountain mama hippie vegetarian natural food fanatic in the 70’s.) mahatma or “other”organic white basmati rice is just as good or better, healthwise, as a brown rice. it is my experience using brown rice in a traditional spanish/mexican rice recipe as the ladies here generously offer, tends to turn out clumpy, mushy, & overwhelms the delicate traditional spanish/mexican flavorings, chiles, and broths.

Am trying this today in our restaurant in China!!! Little confused as the large batch and the small batch seem to have the measurements mixed. In the video you are making the big batch and say 3/4 cup bullion, but in the recipe in the comments there is not a bullion measurement in the large batch and the small batch shows 3/4 cup. Also the Cumin seems to be swapped (1/2 Tbsp large batch and 1 Tbsp small batch). Looking forward to great results...

I made this and the flavor is amazing but my rice is sticky. I used Mahatma extra long grain rice and fluffed with a metal spaghetti spatula. Is there a way to rescue? BTW made The Best Mexican Carne con Chile Colorado and The Best Mexican Boracho Beans and they are both delicious, Thank you!

I always re-heat by adding 1 cup of water mix. Pre-heat the oven to 300 place for 20 min until steamy. Being down the temperature to 150-175 and that should keep the rice warm and ready to serve!

If the rice looks dry, I add 3/4 cup of water, mix the rice and re-heat in the oven 🫶🏽
