1 lb Ground beef , sirloin (90% lean & 10 % fat)

I usually add too much salt in my food, and with all the cheese, I'm scared. Was it not too salty with all the cheese, spices, and reg salt?

I went to a multicultural festival at the local catholic parish last night. It's a dual parish, because they do a mass in English and another in Spanish every week. I go to the festival every year and it is about really good Mexican food more than anything else. The pastor is very popular, and I got there when it opened because I wanted to beat the line which is usually very long. So that was the first time I tried the pastor at that festival, and it was OK. Every year, I get the tamales, and the gorditas. The gorditas are bar far, in my opinion, the culinary star of that festival. So, this morning I was wondering how I could make them and I looked up your video, which is awesome. I subscribed to all and will watch more of your videos. I'm just an American guy who loves Mexican food. I love many cuisines from around the world, but I think authentic Mexican is my favorite.

Ground beef is underutilized in Mexican food. The crevices and nature of the meat allow it to really soak up a ton of the flavors it is sizzling in. Looking forward to this!

Delicious Gorditas! Mixing potato and cheese in the Maseca is novel and tasty. I must recommend one important change. The recommended temperature of the frying oil to too low. At 325F as recommended the patties absorb the oil. I used a thermometer and checked the oil as I fried. 350-360F is a better temperature and Gorditas came out better when I raised the oil temp.

So far I've mastered your Green Chicken and Pork Pozole..I swapped the pork another time and used steak and it was great also..now I'm going to try your Gorditas...I'm sure they will be great...Your making me a Great Mexican Chef 🤷‍♂️

Hi there! Would you be able to use feta? Do the cheese of your choice, it won’t affect the dish. About the masa, maybe you can find masa harina online. Hope this helps.

Oh so excited to try this recipe. Few questions I’d you don’t mind. 1) are most typical Mexican dishes filled with flavor? I love your videos and seems they are. I have however eaten food made from someone who said it was authentic food, but it was flavorless that is why I ask. 2). Is sour cream another authentic ingredient? Most -laces if we go we have to ask for sour cream, never on items or on plate. Thank you for your time.

Hi Maam Rossana, I am from the Philippines and I also love a little bit spicy food and I guess I will love Mexican food if I will be able to taste them as they look yummy! I intend to try this recipe but may I know what is ' masarina ' ? And how about the round cookware you have where you initially seared the gordita, I don't have one but can I use a teflon pan instead? I want to try making it, it's new to me. Will it be the same experience with making empanada? I also love empanada!

Masa harina comes from ground nixtamalized corn, that's dried and then powdered. Later its rehydrated with water to make a dough. Yes, you can use a non stick pan but the one I use is called "mexican comal".
