Just saw this last night and had to make it today. Didn’t have energy to cook the potato but did everything else from my wheelchair. Absolutely delicious! My son and I had the tostada version and I added homemade salsa on top with jalapeños. Definitely a new favorite. Thanks for sharing!

Chicken salad is delicious! ❤ Plenty of chopped celery, onion, some shredded carrot, mayo/mustard, chopped jalapeño, celery seed or salt [take note of salt], salt n pepper... Delicious!... ps: what's also nice, including the above ingredients, is some Sun brand Madras curry powder, [very light amount), and a few raisins or dried currents/craisins... 🤤❤ Another delicious flavor as a compliment to the chicken salad [no curry] is dried or fresh tarragon. 🤌😋 (this also marries very well with egg salad) The only limit is ones own imagination!! ❤🌻👍

I'm using this habenero sauce lately. No vinegar but a lot of carrot. Works so well with the bright taste of the pepper

Never done many attempts of making chicken salads. One time I was given a package of like 12 cans of tinned chicken. In that case i DID do some testing using various spices. The best combo I came up with was a cumin, habenero sauce, scallion mix 😊

Keep the skin on the carrots for the same reason you kept them on the taters. You have an excellent cutting technique with your fingers retracted and the blade resting against your knuckles. I have still not mastered that. Thank you for the reminder to work on that skill.

I'm all for extra fiber and nutrients, but carrot skin is too bitter for me and not pleasant. I always keep the skin on potatoes (but I always remove all the eyes, which again, are very bitter.)

In my country we have a very similar recipe that is called boeuf salad it is pretty much the same thing apart that we add pickled gergkins and pickled red peppers finely diced other than that is pretty much the same thing

I like tostadas but hate how messy they are to eat. Sutff is always falling off every bite and the toppings touch your upper lip and face/cheek every bite.

Maybe make it without any other added salt, try to get at least some cotija flavor in it. It may be some brands are saltier than others. Cotija brings a lot of great umami flavor into a dish, similar to parmesan.
