I remember my Nonna teaching me how to make gnocchi when I was young. They were superb. She always said that Nonno made them better, but I never saw him make them. Sadly they are both long gone. Honestly, going on about how wrong Adam and nit picking every single detail is really not constructive and seems petty. Instead of going off on how wrong and un-Italian he is, try to actually be constructive in your criticism. Example, telling me as a home cook that I need to buy a ricer or my gnocchi won't be worth it, is silly. I don't know a single person who owns one. I've made Adam's gnocchi because it's easy to follow, his recipe is accessible, I have everything I need in my kitchen and it happens to be DELICIOUS. It might not be traditional, but that's what American food mostly is, they take food from the original culture and adapt it. We do the same in South Africa, our cuisine is influenced by lots of cultures and that's how food evolves. On

I don't know what happens in the US, but somehow people are obsessed with ancestry there and somehow know absolutely nothing about their culture at the same time. I often find this when I visit the US as a Mexican, too many people claiming they are Mexican and then I realize they have Mexican ancestry, but they have never been to Mexico. They are somehow very obsessed with being Mexican, and they have to tell everyone they are Mexican but the things they say about Mexican culture is often wrong. Then the Mexican food I find there, is a bastardized version of Mexican food. They often claim it is traditional and done by real Mexicans, but then I taste it and it is bland, Mexican food should never be bland. Maybe they change recipes, for the locals, but then it is not authentic, not by a longshot.

a piedmont nonna use to make me gnocchi only with potatoes and flour (no eggs) best i never had, and melting in my mouth maybe "alla bava" with melted fontina and gorgonzola. they where so soft that it was impossible to tranport them , i think this is the reason why you will never find decent gnocchi in shops, no matter where you are, most of the time they add potato starch and they are rubbery and they stick to your palate, this is why lots of people do not like gnocchi

I've made your nonna's potato gnocchi. Made: pesto sauce, tomato sauce (with olive oil, basil and garlic), fried/coated in bread crumbs and sugar (as used in a central european recipe: "gomboti cu prune"-in Romania) ...and fried in brown butter with sage. The brown butter sage version was by far the best one.

It certainly isn't traditional Italian, but in my experience (and my taste) frying is the only way to make supermarket-bought gnocchi edible. Homemade is different, but getting the dough right isn't trivial, and more likely than not they won't really be good the first couple of times, neither texture- nor taste-wise. So, for most people, store-bought will be the way to go. And I agree with both Adam and Vincenzo, they aren't great when boiled in water...

He never called it traditional so what he made isnt wrong at all. Not everything has to be authentic. If everyone only ever cooked authentic food we wouldnt have half the dishes we have today.

I've made fried gnocchi before and honestly when done right they're really, really tasty: Small gnocchi, low heat, good quality butter, only a bit of extra virgin olive oil, some sage or rosemary or marjoram there. Put the gnocchi in the pan, let the water boil off and at the very instant you hear the sizzling sound, just add a little more butter, toss, and turn off the heat. Put in a bowl, add a generous amount of parmigiano-Reggiano and proceed to mantecare. But those things that ragusea did? They're burned and disgusting, they look like something that belongs in the toilet. Not surprised though, the guy is just a clown, he couldn't cook instant noodles without messing up the recipe.

It's always funny to see people of Italian descent teach Italian recipes and almost imply that their ancestry automatically makes them more knowledgeable but they can't even pronounce Italian words correctly

I love Vincenzo for his great takes on traditional recipes. But I'm not crazy about they way he criticizes people for doing their own thing. People should cook what they like, and eat what they like. Recipes don't fall out of the sky from heaven. Every recipe, not matter how traditional, started out as people doing their own thing with other traditional recipes. Ingredients available change, cultures evolve. Even the most traditionally Italian dish you can think of, when it first started being cooked that way there were certainly people complaining about how it was the "wrong way" to do something they considered traditional. I see this a lot with "authentic" chefs. They get an idea in their heads about what is "authentic," usually based on the standard form of the recipe from late 19th to early 20th centuries, completely ignore the fact that they're looking at a snap shot in time, and that food evolves. I get that, because that's my favorite time period for cuisine as well -- especially early 20th century. But other forms of those dishes -- older forms, newer forms, unique and personalized forms -- aren't "wrong." They're just different. Variety is the spice of life, after all :)

Fried gnocchi is a thing - you cook it and just lightly fry in a butter and sage sauce to get a crisp bottom 🫣 It’s been around for quite a while and using left over potatoes is common - poor you you’re horrified 😂
