Just as a little tip for those who want to take it to the next level: Some pasta dishes appreciate if you break these rules just a little. For Cacio e Pepe, pasta alla Gricia or Pasta alla Limone and other sauces (Butter+Garlic, or Nduja and Onions) where the base of the sauce is for the most part an emulsion of pasta water and fat, I use considerably less water to cook, so the water gets extra starchy. For all of these "pasta water emulsion" sauces that also a lot of salty ingredients, like peccorino cheese, guanciale or pancetta, like cacio e pepe or alla gricia, I will use a lot less salt for the pasta water. All of these sauces, where the pasta water and fat emulsion is king, I also undercook the pasta in the pot for one or two minutes and finish it up in the pan for a bit longer, to get a better emulsion and to be able to thicken up the sauce better. For all other pasta dishes, where pasta water is not a major part of the sauce, but just an additive, I use plenty of water and make it "as salty as the sea", as explained. OMG you are so right - I`ve been doing it wrong for years and around some 4-5 years i make Pasta like you instructed - Tastes waaayyyy better! Prior to that, i did all the bachelor mistakes you can imagine ( Oil in the water, cooking sauce at the end, draining pasta in cold water and letting it dry to a cold clump of starch...you name it).

I recently made carbonara for the first time ever; I couldn't get any guanciale so I used pancetta instead, and I thought the sauce was the right consistency so I didn't add any pasta water and it worked well for me. It was so odd to not put garlic in a pasta dish since I love garlic but this may be the first thing I've ever made that I think garlic would've ruined.

@@vincenzosplate At least I know for sure what ingredients I am putting into my body when I make my own foods. One thing I do have to have when eating any Italian dish, is a fresh grated 2/3 Parmesan and 1/3 Mizithra ratio mix to top my dishes off. I just put both in a bowl and mix it together. There's just something so delightfully heavenly that Mizithra does to my tongue. LOL I even use it when making Grilled Cheese Sandwiches with my own homemade Sourdough bread. Just adds a special punch to it, to take a normal Grilled Cheese Sandwich to another level.

It’s always neat to watch Italians passionate about pasta. As a hungry teen living in Italy for 4 years, I learned numerous techniques watching my Mom and neighbors cook pasta. What I didn’t learn was reserving pasta water and cooking the pasta/tossing with sauce. That was a new technique I’ve been using couple years and it makes a huge difference. Vincenzo is spot on for his tips and techniques.

@@vincenzosplate A parità di materia prima (semola, acqua e nient’altro) una differente colorazione la si ottiene a seconda del metodo di estrusione: la trafilatura in bronzo rende la superficie della pasta più ruvida ed è principalmente questo effetto a rendere la pasta di un colore più pallido, oltre a migliorare l’aderenza tra pasta e sugo, mentre la trafilatura in teflon, diminuendo gli attriti, produce una superficie più liscia (però permette una velocità di estrusione superiore e quindi un aumento della produzione oraria, per questo motivo viene preferita dall’industria, per categorie di pasta medio/bassa). Infine, all'altro estremo, c’è anche qualche artigiano che sta sperimentando la trafilatura in oro, per alcune produzioni super-premium.

Very informative. I’ve leaned so much from two videos. Why didn’t I learn this years ago (I’m 78 today) I love pasta and I love cooking. This will def. up my game in future. Can’t wait to go pasta shopping. Gone are the cheap varieties. I’ll invest a little extra cash and see if I notice the difference.

Step 6 - If you use tongs you may not need to add starch water since they will still be dripping water. Step 7 - Watch the pasta, it will change color, that will tell you when the mantecatura has occurred. It can take from 30 seconds up to 3 minutes but usually 1 or 2 minutes depending on the pasta.

Vincenzo I have been trying to make your fettuccine Alfredo but every time my parmesan cheese sticks together and clumps up. Any ideas why this is happening?

not sure how he made the alfredo but when making similar dishes like cacio e pepe or pasta alla gricia, i grate the parmigiano and then slowly stir it into the pan while still hot like 1-2 tbsp's worth at a time while adding the hot pasta water as needed to create the sauce. perhaps this technique will work with that too.

I never doubt the person who makes the authentic Italian food I have seen. But dressing my pasta with a little roasted garlic oil is so yummy. Maybe I can add oil on top of sauce as a dressing. We must try it.
