Today on the Retro Time Machine I'll be sharing a family recipe and a vintage kitchen classic - boiled frosting or fudge frosting!
You will need:
3 cups of sugar
3 tbsp of butter
1 cup of milk
6 tbsp of coco powder
pinch of salt
2 tsp of vanilla
small sauce pan
digital thermometer
whisk or spoon
sheet cake
heat to 227 Fahrenheit !

Fill your clean kitchen sink with a couple of inches of cold water and set your pot of hot fudge in it. Then you can whip it with your whisk and it will cool considerably faster. My grandmother taught me this trick.

This reminds me of my mother’s cooked chocolate icing, however, she used Baker’s chocolate squares, melted them with the butter, sugar and milk, etc and proceeded to stir (constantly). She would test the icing for doneness by dropping a tablespoon of the icing in a cup of water and move it around to see of it had reached the low or hardball stage???? (i don’t remember which). What you’ve done looks a lot easier. Thank you so much.

@@RetroTimeMachine Gray is so gloomy to me. I live in Arizona and it seems like every house is painted beige inside and out… Boring! I love jadeite dishes and I have some that I found on eBay years ago. It’s a little pricey but I love it because I remember my grandmother had it in her kitchen. I did see the videos of your home tours and they’re so beautiful. ❤️❤️You are blessed to be able to decorate as you do.😊

I begged the neighbors next to me who had to remodel due to broken pipes to save the pink bathroom if they could because the generations to come who are buying homes want character and woodgrain! Comments like yours keep me inspired to keep creating even through the harder times in life ✨️ bless you so much! P.S. They kept the pink bathroom ;)

Excellent video compared to about 20 others I watched looking for this old recipe. You win hands down. Informative, direct, straight to the point and all in 4 minutes and 30 seconds. BTW, today I made 2 batches using your basic instructions plus Karo syrup as I sometimes used it in my recipe in the past which helps it set up quicker (perhaps a little too much quicker). Both turned out wonderful. I topped a 9x13 pan of homemade brownies and a yellow bundt cake with the other batch. THANK YOU, THANK YOU, THANK YOU. I subscribed.

I am so happy to hear! Its taken a bit of research to get it right! I recently found another boiled frosting recipe (white!) in a 1920s Better Home and Garden! I'll be doing a video over that one soon!

I can't tell you how happy I am to have found your video. My grandmama made a similar icing to this, poured over yellow box cake. As a true southern cook, she never wrote down measurements or directions. Like your sister, I've worked to perfect it according to my memory for years. Grandmama used semi sweet mini chocolate chips in addition to dark chocolate cocoa powder. And a full stick of butter instead of the half you used (like I said, southern). It comes out a deep dark shimmering mesmerizing delicious treat. I've made it for many friends over the years, and no one ever knows what it is and they are always skeptical, preferring whipped buttercream. But then they try it!! And they are hooked just like us. Thank you for your video!

Thank you. The end resuls seems to be exactly what I've been searching for: "the one" , ie. not hardened, kinda of soft but still with a crumbly/sandy texture. I will give it a try tonight ! Thanks for your grandma and your sister for having worked out the kinks and you for posting. Also... do not add vanilla as it will tone down the chocolate, so instead, replace with a tbsp (or 1/4 tsp) of instant coffee which will instead, enhance the chocolate flavor... or Kahlua, uummm ! Well, it came out ok... a little more sticky than I wanted but I admit it: i used 1 cup of evaporated milk as we were out of milk... and, guilty as charged, 4 tsp butter just because it was easy to use one of those half-sticks. Lesson learned, "stick" to the original first. Will certainly try again. 2 weeks later.... I redid the recipe, and it came out "a lot of delicious frosting, very sandy, crumbly, but still a lot. Yup I followed the exact recipe this time I can't complain. The amount produced is enough to cover a 9x13 pan cake with a 1/4-in thick, whoa !! Took me a couple weeks to eat the whole cake lol... daughter and wife did not like, either the cake or the frosting - yup, I made the brazilian version of carrot cake, which we cover with this kind of frosting (Betty Crocker super moist and 2 1/2 cups of finely grated carrots). Oh delish ! For my next cake... will be a while.... I'll cut down the recipe by 1/3 which is enough for my pan size (Betty Crocker mix box) Finally... the temperature will not go over 225.F ... maybe when the fire is really cranked up but it could easily burn the recipe.... slowly does it. It will boil, alright. Thanks again for the recipe.

Sadly this recipe is one of those that takes precision and not varying too much from the recipe. A bit too much or this or a substitute of that can end in an unsatisfactory result! I'm glad to see you kept trying and got something you enjoyed - even if the wife and daughter didn't!

@@RetroTimeMachine You are right, of course, and I leaned by doing the mistakes. My second attempt came real close. But it was "too much" frosting (is that possible ? 🙂 ) or the cake was too small so a thick 1/4-in-5/16-in layer covered the ( 9x13 small ?) cake. I still ate much of it and shared with a friend who also enjoy this frosting. What a sugar boost ! Thanks for recipe again.

@@RetroTimeMachine so basically this is identical to the Hershey's Old Fashioned Fudge where you get the temp to a soft ball stage when you put a drop into a glass of cool water? The main difference I noticed too, is that in the homemade fudge recipe, you do not add your vanilla & butter until the last stages.

My granny would make a Banana Fudge cake using this icing. Her cakes were made from scratch and you use over ripe bananas. Slice them up then place them on top of the cake and then pour the fudge and place in fridge till chilled. It’s amazing.

Finally a good recipe!! I also love the retro look! In our old house everything was 1920s to 1940s era, kitchen stove was a 1927 white star gas stove and monitor top refrigerating machine 1927 General Electric! Miss that house so much. Glad. Found your videos! What kind of stove you have?

THIS! Ol' Timey Tip: It's good poured over Ice Cream too!!! Just save, refrigerate in a stovetop pyrex dish. then simply reheat to pourable consistency for next use! Also; I seem to remember some type of cold water drop test to check doneness.. But I've never been able to get the right consistency.. The granulated sugar should still be a little 'grainy' once firm, giving this that old time uniqueness it once was..

We used to make that as kids and pour over a white cake, I wish I could remember the measurements and ingredients, I do remember using the bakers chocolate squares, canned milk, granulated sugar and butter, adding vanilla when taking off the heat, it would turn hard when poured over cake, I think we called it hard fudge frosting, if anyone has the recipe please share, thanks

I can always try figuring out that method with the bakers chocolate! The only issue is that I wouldn't know the exact consistency desired to match the one from people's memories, but I can definitely give it a shot if you'd like!

I recently lost my candy thermometer in a house fire. So, until I remember to buy another one, how long should I boil it? If I boil it a little longer will it turn to fudge?

I don't as the icing tends to bead moisture in the refrigerator. It's safe out on the counter covered for few days! It won't last very long anyway - it's too delicious 😋!

I'd recommend using a larger cake pan! You only want to fill your pan about 1/3 of the way. Are you making cake from a box or scratch?

Some people use a drop test in cold water but the thermometer works best. They're not that expensive and I use mine all the time for cooking meat. It's a good kitchen gadget investment!
