-Make poolish 24 hours before, 400ml Water, 400gr. Flour, 5gr. Yeast, 5gr. honey.
1- All Poolish
2- 130gr. Corn Meal or Semolina
3- 270gr. Flour Any
4- 30gr. EVOO
5- mix 100ml. Water with 24gr. Salt

There many many secrets to the best pizza. Dough, toppings, sauce, smoked, fire, kinds of wood. less but not last CHEESE, AND HERBS ect MY GO TO PIZZA IS FIRE AND SMOKE!

YUCK corn meal is used on the pan to protect the pizza NOT IN THE DOUGH. You want your pizza crust to be almost bread like. but a little more flexable and stronger than bread. You want the crust to rise around the sides, where there no pizza sauce on it. Any where you put the pizza sauce, it WANT RISE

I enjoy this kind of pizza, thin crust with sauce and cheese all the way to the edge. This was the pizza I ate over 60 years ago, as a child living in the NYC area. Now I live in Colorado and the pizza and Italian food is different, sometimes awful. Your channel is helping me make my own. Thank you.

Followed this recipe the other day. Awesome!!!! Just like all of your recipes/techniques. I went a little smaller on the dough ball size, 260 grams vice 300. Made 2 pizzas, froze the remaining dough balls for another day. Cooked my pizzas on my Forno Bravo pizza store for the cook. Will use my Ooni for my next cook. Thank, graci Vito!!

don't wish any further. The Gozney Dome is back on the market as of today at noon. I just ordered the dome because of Vito's reviews. Not knocking any other company, but this thing doesn't look like a $1,000 dollar toaster oven.

this reminds me of mellow mushroom pizza. its a pizza chain in the southern USA and they use corn meal as well. for sure makes for crunchier style and easier to work with.

Don't you have a stove in your kitchen.NY style pizzas are cooked in Gas ovens Higher temperatures because there professional ovens But you can do it at home really well Heat your over at the highest heat usually 500 550 for am hour I'm a chef baker I've baked pizzas at work in restaurants. And at home in my gas kitchen stove All the time for years And there just a good if not better than most pizza parlors lately in black Sicilian pans using mesh screens on my baking stones or a large cast iron pizza stone and they have been great. Iam . from Brooklyn NYC so I grew up surrounded by pizza places .I myself experimented with different flours bread 00 high gluten semolina all purpose some times a bit of whole wheat çombinations topings are usually for sccillian there thick enough in my personal opinion Different baking methods and pre bakes Using the broiler to finish. And using steam added to oven I pre make the dough cold rise in fridge up to a few days but also 12 hours after one hour outside after mix n kneading then I take dough out an hour before shaping come to room temperature My sauces I never cooked The cook on the pizza in the oven so the taste is bright not over cooked though the night or day before baking I might put tomatoes in a jar add a split clove or 2 of garlic shredded basil I like Parsley sometimes add it for Vitamin k fresh ground blk pepper never salt everything else has lots of salt already I use pecorino cheese which is Very salty Heat up the oven and house for and hour or more and make my pizzas And it's great I don't need a over priced trendy Oven a pizza oven Or a big professional one I've used at work I get the same results though I've years of practice a thousand pizzas You don't need special equipment You can make a great pizza at home Pizza really became popular when it was bread making day and a chunk was ripped off to make different pizzas and using left overs too A " BIGA" was a raw piece LEFTOVER on purpose for next week's pizza bread day Lile a sourdough started to compare it too This is peasant food at its finest that became very popular like many porova. Culinary Foor of the poor Also I perfer fresh cakes of yeast half of the small blocks u can find in a lot of Supermarkets still.a half is enough for up to 5 cups - 8 of flour Keep your yeasts wet n dry in the freezer to stay fresh longer I often find pre baking crusts with a coating of sauce especially thicker square pizza gets you a better crust at home and I keep my sauce cheeses ready but cold so they don't melt so fast and you get Grease puddles All ovens differ You'll have to experiment a bit till you find Your best method for Your favorite Pizza. Also spining under a broiler if needed can help Don't over cook cheese it will be greasy lose its lushness and stretch It will be oily and crispy so watch it That's why I use the toppings cold so the come out cooked even with a good crust and why preparing often is a good choice

@Sam Thunders Well aren't you just special. I've made oven pizzas for years and my mom made them as I grew up. Being 56 and growing up in an Italian household, I'm very familiar with them. Sorry, but a pizza made in my wood oven is just better tasting. Plus it's fun. I get to play with fire, drink beer and make food. You stick to your toaster oven.

@@lee9604 Hi Lisa I never measure I go by feel because I know by now what I'm looking for Try Adam Ragusa here on KZbin his pizzas recipes and advice He gives measurements And he's great he cooks great food and not complicated You'll like him and his NY Style pizza recipe is great Please check him.out Let me know how it turns out Sometimes it takes a few times to get to know your oven the dough to all come out the way you like so don't give up My first pizza looked great but the dough was a brick and white underneath a disaster but I tried again. I tried a Chicago dough with corn meal and it was good. But I always go back to Napolitano style for some reason. I always want that airy cornicione.

Vito, I think you should give us your unbiased and honest review and compare the Goz Dome to the ZioCiro dome oven since it's more in that type of category due to the higher price point. :)
