We made a poolish dough over the days. The taste and texture was perfect but we struggled getting the dough on top of the peel and off the peel into the oven. The dough would bunch itself up when trying to get the peel under it. We had plenty of flour under it and on the peel but the dough just seemed so flimsy. Any suggestions?

Can the dough be made with 100% semolina flour? Can the poloish be made with semolina flour? (I am allergic to white flours and can't use them.) The dough I currently make with semolina flour requires two risings of the dough and the second rise is in the refrigerator.
