the theory is called reverse spherification. the liquid with calcium will react with liquid with sodium alginate, and form a gel membrane.
here are the ingredients:
use any no bubble drink/juice you like.
calcium lactate: 1-2% (of the drink)
(eg. 500ml drink with 5g calcium lactate). if you use yogurt, you don't need to add calcium lactate, yogurt has it.
optional, add edible glitter to make it look dreamy.
sodium alginate: 0.5-1% (of the water)
butterfly pea tea: natural blue food coloring, will change to purple if adding lemon juice or soda
