Matcha is just finely ground green tea leaves so the same tea bush that produces green tea leaves produces Matcha hence the tea taste. I just add hot water to mine and drink it like that coz I like my teas plain. Also if you can't find tapioca flour just get cassava flour it's literally more or less the same thing tapioca flour is just more starchy but all come from the cassava plant
