After watching you for a few years, I hope it’s OK to share some thoughts. Something I heard many years ago always comes back to me… “you can have everything you want in life, just not all at the same time”. If your body has been telling you to slow down, listen to it. If you give it what it needs now, it’ll give you what YOU need later. This program will always be there in 2 years, 10 years, after you have kids. Maybe there will be better opportunities in the future. Hit pause for a bit and enjoy your new home and marriage as this time will never come back. After you have kids, you may feel more of a need for me time and things that bring you joy. Maybe then culinary school will be what you need. Wish you the best on your journey ❤

Michel, I have to add my advice to that of zeeposts and the others above. You may be better off not jumping into so much school work at this time and concentrate more on yourself and what your body tells you that it needs - such as rest and relaxation ‼️ You are still young and, if you want to get pregnant within the next year or two, I have read that you need to get your body ready ahead of this which you includes less stress and increased sleep and rest to ensure that you lupus doesn’t flare up 🙏 Also, you should not eat garlic 🧄 if you have lupus. Sorry to sound like a downer, but it’s better to be safe I think ❤ You and Jordy are so sweet together - wish you both the best of everything ⭐️😍🤩👏🏻🤞💚🍀

Michel - Your chats are always very honest and vulnerable. Fwiw, from an outside perspective, I wonder what your ultimate food-related goal is - do you really need culinary school to achieve it? Especially given your celiac experience - can you not take the food education/experience you already have and really lean into the GF aspect of whatever those goals are (clearly the culinary school is behind the times to be unable to accommodate this). Everything I’ve seen in your vlogs and that you’ve shared makes me think you don’t need the additional formal education. In any event, best of luck to you in achieving your goals! 💜

You can do anything you want but just remember your health , your health is you, don’t rush anything. I was 34 yrs old when I went back to university to do my my Engineering Degree, I was the oldest in my class but I did it, just take your time, you’re already an amazing person. ❤

Hey michel! Your car chat really struck a chord with me and I’d like to echo someone I saw in the comments here - especially as someone who is also chronically ill (wegeners patient with a kidney transplant) and a young mom (I think I’m the same age as you?) - you can have everything you want but not at all once. People for some reason think they’ll die at forty but that’s not the case. Once you have kids and they go to school, the program will still be there. The question is, will you still be healthy enough to be there with it if you run yourself into the ground? Take it easy, take care of yourself! I’m sorry if that was a little dark but it’s something I’ve been having to confront lately as well. Love love love ❤️ hope your week is awesome!

I would look at non-traditional classes and workshops to expand your experience and nurture your passion for food. I've been doing that in my city, gluten free sourdough class, fermentation, did several different cooking classes of cuisines from different countries. So many options! I also have celiac disease and a dairy allergy and this has been the best way for me to fuel my passion. I work as a health coach and I'm studying to be a holistic nutritionist. There are so many options to learn if you aren't necessarily wanting to be a chef ❤️

That’s a great idea. What do you search for? I have gluten and dairy intolerance so couldn’t do a traditional cooking course.

@@vickyb9918 I've found some classes through going to markets where vendors sell bread etc and some of them also teach others. Holistic Nutrition schools where I am also offer classes for cooking for people not enrolled in the full programs. There are also places where I live that you sign up to learn to cook a several course meal and eat together with everyone at the end. They are quite popular so maybe something to look for :)

Just a thought you just got married, bought a home and you have almost a full time job ( contracts, sponsorships etc.) THINK about your health, it wasn’t that long ago your skin was breaking out and you did not feel good. Your marriage and health should be #1 . Please don’t think I am being mean but I really care for. I love turnip greens but here in the south we cook with smoked ham/ bacon.

Hi Michel, are you willing to not be able to travel for the next 2 years, while you're in school? It seems like you are commiting all of your time to school, before having kids. I get that you are excited to learn, but it seems like an awful big commitment. you & Jordy are newly married. From someone who has been married a long time. I know how quickly the first year of marriage flies by. Slow down, take time with Jordy, visit your parents & sister while you can. Learn to cook, but without all of the constraints of a structured commitment. Just my opinion. But i hope you take time to think it through before committing. We all wish the best for you.

Since you say you are wanting to try having children in 2 years or so, I HIGHLY recommend not overdoing your schedule right now (not doing the culinary training thingy). I’m a mom, and boy I wish I could have know to relax while I can. Just a suggestion. Proud of you!

I think some are hearing you with love and respect it’s ok to put your “list” down twice a week and live a moment that’s not checking things off. It’s ok not to be productive everyday. Your mental and physical health needs a breather. I can understand the pressure social media life puts on so many individuals that have crashed and burned into a serious mental burnout of 6 months or longer. We care about you.

Michel this is the perfect time to sit down and figure out what exactly you want to happen from this program. Don’t make rash decision. Figure out what you want and need first. Also, instead of using those individual plastic bags for produce just put everything in a canvas bag!! You can weigh it and put the stickers on the outside of the bag. No need to waste all that plastic!❤

One question to consider when trying to decide what would be the best option for yourself, health and family is what the end goal is and which program / option / lifestyle will get you there. I worked in Hollywood for many years, followed by time as a TV news reporter but ultimately both lifestyles were not serving me and I realized making content was my true passion, and finding a way to share what I loved (in my case it is travel on a budget) was the most rewarding. I thought the credibility of being on TV or saying I had a certain degree or position gave me clout and would lead me to my dream lifestyle, but ultimately those industries have become outdated. For some reason the culinary experience feels a bit like that to me with potentially not being able to accomodate someone with celiac. I think you can soar with a private chef instructor and building a full channel if having your own cooking show is the ultimate goal. But if you don’t have the blueprint to the house, you may want to just take a beat before laying the foundation. ❤

You remind me of my sister. Talk about how busy you are, never can slow down, want to slow down, yet you continue to keep making more obligations. I don't understand it as I am totally opposite of that. Prob. should figure how with kids you will do that before starting a family. It isn't going to just come about then for your personality type. All this said in love not judgement. I agree with zeeposts comment below.

Hi Michel, I think it's ok to take things slow and listen to your body. Also, I personally never took any culinary classes, but I have watched many videos of recipes and cooking techniques. I don't really think it's absolutely necessary to spend so much money and time on culinary school when you can learn so much online. My question is do you want to open a restaurant or work in a restaurant? Working as a chef is a very stressful job... If I were you, I would take a marketing class because marketing will absolutely help you boost your business versus culinary school is more of a hobby in my humble opinion. Please don't take this as criticism, I'm trying to advise you as a friend or older sister. ❤

Girl, you gotta wash your greens more thoroughly so you won't end up with bugs floating around in your cooking water! LOL Whenever I cook greens, I fill the sink up with water and put my greens in and swish them around, so all the grit and dirt fall to the bottom of the sink. I drain the water and then do it all again about 2 more times. You should look up some Southern recipes for cooking your greens.

This exactly why I follow you here and look forward to your videos. You are so authentic and I enjoy seeing that life is not set on stone and it’s OK to want something and then next season or the next month or next year or next day change your mind and do what’s best for you and listen to your body I appreciate you sharing this and please keep doing that and it’s you are making a lot of people feel good about themselves and know that it’s OK to change. Ooh I would definitely do culinary school now! Of course all your own choice but interesting to think about because if you’re going to be starting a family then it feels like the only option you’d have is to film your day with kids (which might be less than ideal to need to balance protecting their identity online etc. I know family vloggers exist but maybee risky these days 😢) If you set a foundation for culinary content then you could move more into that/ faceless content. Right now I love your vlogs where you take us along your day of course, it is very relaxing 😊

Thanks for that wise comment! I am kind of shocked how many people are advising her to not do the degree. I think a degree will also give Michel the option to start a completely different, offline, career, if she every wants to, and all that knowledge in courses without a degree might not be accepted in Job interviews.

That's basically what I want to do. Go to college just to learn but don't really care about getting a job in the field I majored it. I'm not interested in getting a job after college, I plan on doing something else.

Love your realness and passion for food!! I am currently a nutrition and dietetics student with an 8 month old and I work as well. You can do anything you want if you put your mind to it. Ofc your health is important but if you want it bad enough you’ll make everything work….Or maybe I’m just as crazy as you😂 Best of luck on whatever path you choose!

Hi michel! Love your food haul 😍 I’m an herbalist and wanted to pass along that stinging nettle makes a delicious pesto!! Use rubber gardening gloves to strip the stems and put the leaves into a blender. Blending them busts open the cell walls and removes the sting. You can use them in place of basil or with basil. Any pesto with nettle is soo yummy and super nutrient dense and satisfying 😋

I’m sure there’s cooking classes you can take without getting the degree, which might end up being cheaper. Unless your plan is to work in a kitchen or start a restaurant… maybe being a full time student is overkill? I recommend any cooking classes your community college might have.

Curious what skills and learning you want to acquire and if there’s a way to create that learning for yourself without committing to a demanding school program? That’s what I did for my creative life and learning basically became an ongoing decades long life-style where I got to Learn AND practice my art.

This might be crazy, but you are proof that "youtube" and online research can take you far. If you arnt looking for a diploma and mainly appreciate the magnificent "art of learning", maybe a well informed/scholarly food youtube channel is something to look into. You might even find fellow foodies. Just a thought

Oh wow Michel that’s a big thing! I love that it really does feel like it’s perfectly made for you. You of course have to do what’s best for you. I wonder if more one day vlogs might helps ease the work load a little. I think if you can make it work having a PA that can filter emails, edit shorts and reels maybe even help with some household stuff etc definitely weigh up all the options however ridiculous they sound because what sound ridiculous in one minute can be talked through and seem much more doable in another. Xx❤ excited for the possibilities you have ❤

My two cents on going back to school: if you love it, do it! Speaking from experience, I started my Masters degree two weeks before my husband and I got married in 2021. It was difficult, as school is of course, but it was made infinitely easier with my husband in my corner. After graduating this year and looking back on the experience overall, I literally couldn’t have done the Masters without him, his help, and his support! I think as long as you and Jordy agree to full send, it’ll make you guys even stronger… and make you even more of a “team” when the kiddos come along!

This does not seem like a wise decision right now. This is something you can pursue later in life, but the purpose does not seem to be a good long term decision for your health or marriage.

As someone who has attended culinary school, fresh out of high school 10ish years ago..the diploma is completely unnecessary. What is necessary is the skills and knowledge you gain. Idk what your end goal is here, but if it’s to work in a professional kitchen, no one cares if you have a diploma, they care if you can cook. I had just finished culinary school at 19 years old, went and got an interview at my dream kitchen (5 star 5 diamond hotel in the banquet kitchen) that literally the best of the best get hired into. I had my diploma and I had the skills….my skill and my knowledge got me that job, it got me in the position of a sous chef at 20 years old at the same establishment….the diploma at this point is a piece of paper. I say all of that to say, if you don’t HAVE to go full force into a diploma program and you’re only doing it to say you did it….it truly is not worth it. I’m now 30 years old, married to my HS sweetheart, pregnant with our second baby and a full on SAHM. Turns out, working that hard at such a young age burned me out before I turned 30 😮‍💨 Do I regret going to school? No. But do I wish I would have just gotten the skills and knowledge needed to exceed in the culinary world? Absolutely. Time is of the essence…don’t waste it!

Michel - Lots of people have dietary restrictions, and who better to help them to obtain delicious meals than a chef who also has dietary restrictions! This is your culinary niche! This is where you get to shine! If this school decides that you are not a good fit for their program because you can’t consume gluten, then they are not the school for you! I can see how passionate you are about cooking in your vlogs and this is all that matters. Use your desire to enter the culinary world as a nutrition-oriented, gluten free chef as your edge! Don’t give them the chance to see it as a deficit, and they’ll be silly to tell you “no”! … and if you give this your best shot and it still doesn’t work out, then just remember that God has a plan! I wish you the best of luck and happiness in pursuit of your passions! You can do this! ❤ -Nicki

Not to mention - celiac disease is recognized by the ADA as a disability, so it would be illegal for them to reject you on the basis of you not being able to consume gluten! It might also be illegal for them to ask the question in the application process!

Hey Michel! I love your videos so much and they are such a gift to me! I see the other comments worried about you not giving yourself enough rest but I’d counter argue that point and point out that maybe culinary school is rest for you because your everyday life is so much content and work for KZbin. Culinary school and programming gives you several hours that are just about Michel and your needs and your artistry through food without cameras and without vlogging. In those extra hours you might gain of “rest” being home, you’d probably fill your time with more content and more marketing/brand deals and KZbin work. I think from hearing you it sounds like you want to take time to dedicate more of yourself to other endeavors and passions you enjoy and that can be restful since so much of your life interlinks with work. I think if it’s a passion you have and something you want to prioritize- go for it! I don’t think you’re making the choice of resting vs. not resting, I think you’re making the choice of what rest looks like and what you need most of that’s rest in being home and having more chill time or rest from KZbin and social media overhall and saying no to more of those things to do another one of your passions! Whatever you choose it will all be exciting and you can ALWAYS change your mind with whatever choice you make!!!

Hi Michel, I have a question, and you have probably thought about this and may just be choosing not to share with us--I totally understand if that's the case. I was just wondering what the end goal/purpose of having this culinary education and possibly a degree is for you? Would you ever consider a business venture that would require this kind of knowledge base down the line, or is it just for fun? I think that's what I'm wondering. I can relate as a fellow foodie and I have always thought it would be a fun bucket list experience to go to culinary school, but I have had to accept that it just has not been the right time in life to do that yet. I have an autoimmune disease as well and unfortunately in order to thrive and not burn out we must say no to certain things in order to say yes to others. The right thing at the wrong time is still the wrong thing. So I guess that's the big question: is it the right time, right thing? Excited to see what you'll choose.

I have the same question too and I asked it. Seriously, I learned most of my cooking with videos online. I also learned by watching my mom cook, helping her in the kitchen and trying things on my own. I see more value in Michel doing a marketing class...

So I've been going through a similar dilemma of going back to school or not. And despite what I am reading in the comments, I say "GO FOR IT!" Have fun while doing it to. I just enrolled in a certificate program for a subject I consider fun and even though I haven't got in to the program it gets me so excited to think about. This program may not improve my job prospects nor make me more marketable but I want to do it and that alone is enough to go for it. Life is short, why wait, as someone who has had my fair share of ups and downs I always say there is no time like the present.

Honestly, I feel like having celiac might be a benefit. Gives you and the class the opportunity to try new work arounds. Also, there are some cute date night cooking classes in my area. Guessing they are everywhere, would love to see you and Jordy try one together! ❤

HaHa! I just spent the morning, here in the NC mountains, foraging for Nettles off of my land! I saute' them in olive oil with a little garlic and fresh ground pepper. Delicious! I'm going to use part of it to make Gnocchi ( substitute nettles for spinach in the recipe)! It's exciting to see you talk about ramps and nettles They both grow wild here!

I listened to a podcast recently that discussed how they were questioning if they were able to do something/worried about how it would work and God sent them the message "Have you even asked me to bless it?" I recently felt similar about my photography business but I asked God to bless it and he gave me and in literally a day I had 2 bookings and 4 inquiries!

Where I live stinging nettles grow naturally and they are a a pain to deal with but it's also a sign that you have really good soil they only grow in nutrient dense soil !

Hey Michel, I hope that through all the different thoughts and voices you can make the decision that God and your heart lead you to! :) Often when I felt like there was need for a time of slowing down, I still found myself in unexpected business, but I feel like God is teaching me to approach the busy differently and to make space for rest with Him in the midst of what life throws at me. I pray that He will reveal to you and make a way for what your heart needs most! 🫶🏼

I think the reality is school would be infinitely harder with kids involved so my vote is to do it now when you can actually put your heart and soul into it. I love my career, but I loved it more when I wasn’t juggling kids. I can’t put the same focus into it that I could back then so go for it now and if you take a break once kids are involved you’ll always have it to go back to! Good luck!

Are you thinking after you done this course ,aiming to open your own coffee/ Lunch place ? Or is it more to learn for Entertaining cooking ? Seems a lot of hours with the Restaurant hours of training , home work , days of studying .plus Your You tube channel, etc 🤔 but you must really think of your Body / Health too the tiredness with HEDS is No joke ( i know all. another wonderful video that left me reflecting on my own thoughts.... But i wanted to pop in and give a bit of advice I LOVE essential oils especially to defuse and I asked my vet so maybe ask yours for what scents aren't good for dogs as mine has stated citrus is not good for them... so I wold just double check for oils you can defuse in your home that are safe for pets. i've also heard they can be different from dogs to cats.🙃

Michel, be VERY careful with diffusers because of Max... pets have problems processing scents. Please look into it. Many of them are deadly to cats.

Don't let the dietary restriction questions get you down! They are likely asking because they may need to assign an aid to you during in class cooking so you can properly season dishes. It shouldn't hinder you in any way. If anything, it may give you an edge because you'll be noticing the subtlety of each stage of the dish, asking detailed questions about the different aspects of the dish to your tasters, and really paying attention to eyeballing the seasoning. It'll be a bit more brain power in class but you'll be gaining a lot of valuable knowledge by having to approach it a different way than your peers who can just taste as they go. And you can always try to make a version you can eat at home or something with similar profiles so you can understand the lessons. That may be something you can discuss with your mentors. "This dish has these profiles and I can't eat these things. Are these good substitutions? Or what would you recommend?"

Save the money and turn to KZbin for learning how to cook. that’s exactly what I tried to do on my channel, but there are so many other cooking channels. I’ve seen some of the Michelin star plates you’ve put together and I must say quite impressive. it would be great to see the pottery as part of your presentation. Thank you for sharing your life with us. You have helped me through so much pain and struggle. Your channel is so inspirational.

Eating stinging nettles? I didn’t know you could….but it is used for medicinal purposes by the Tlingits in Alaska…..I used to get those welts all over me running through patches as a kid. Or picking berries, they are every where in a temperate rainforest.

Just follow your heart. Weigh the options and make the best decision. Like you said, you may start trying to have kids and then it will definitely be too hard to do all the things you really want to do. And maybe school will inspire you to start making something that becomes a sort of job. Such as s cupcake maker. Either way, you have lots of love and support and can follow your dreams ❤❤❤

I think you need to figure out what job you want, and then evaluate what you need to get there. Don’t waste any more time & money on school until you figure that out. Seems like you’ve already done that on a dietary nutrition degree then food business then this past program. Aren’t you looking into the specifics before enrolling? Slow down and pause the schooling until you’re confident it has a true ROI equaling a career.

Honestly don’t think you need a diploma to pursue food. Maybe you can just make a series for gluten free baking and use your dietary restrictions to your advantage.

Appreciate your honesty. I know most people are saying you should wait, however, if you do it after you have kids, it would take time away from them, unless they are around 18. Maybe you could do more food content videos ( revolving around school) and less vlogs. Or since you film so much when you vlog use the content for more videos.

You would be surprised at what you can do. I graduated law school with a full-time job and 2 young children, with a husband who worked 14+ hours days. There was a lot of juggling, but we are more capable than we often think.

You can EAT stinging nettle?!!? OMG this was the BANE OF MY EXISTENCE in during the 3 years we were living in Germany (military brat). You would literally brush past this and it HURT SO BAD until you washed it off 😭 I played outside almost everyday and I regularly had this on my legs, it sucked so bad LOL 😂

Honey, I’ve been watching you for years…. Since the first wedding. And I’m so so proud of you!!!! I have some thoughts. OK it might be interesting because I am coming from the restaurant industry. I was a five star chef at vertigo in San Francisco. It’s a closed restaurant now, but it was very popular in the 90s!!! Anyways, I have since been a baker and left the restaurant industry to become a dog trainer and behaviorist. My true heart calling.❤ I think that if you do school is going to be OK, if you get into this program, it’s all going to go smoothly if you hire somebody to help you with the KZbin stuff. You cannot do both unless you hire somebody with the KZbin stuff. You can absolutely do everything on your own, but it would make you crazy and why go crazy if you don’t have to??? if you have the ability to hire someone absolutely do it. That’s what I say and I see the love of food in you the same love of food that I had. It’s for sure I see you and Jordy opening a restaurant in yours to come

Hire someone for housework! It's the best thing ever. The other thing is to work with your therapist on allowing sloppiness back into your life. You have that perfectionist streak, you are made like that, but you cannot expect from yourself to be perfect all of the time- at school, etc.

Having kids cured me of having to have my home perfect all the time. It definitely brings peace and tranquility to those of us that need tidiness but once kids come, my peace and tranquility came from the comfort of my baby and it no longer mattered if my living room was trashed. 😂 This comment is not really relevant to anything but your comment just reminded me. 😊
