There are kitchen compost that is like a call canister so while you cook you put scraps in it and you can dump it in the backyard compost when full. Also I had flies in my compost when I lived in FL (I’m sure I did something wrong) but pour lime in it and it’ll kill any fly children. Love this journey for you!

Ok, as far as the seeds. It's good to start the seeds indoors. I'm loving the green house. I almost got one 3 years ago however I want to move first. Anyway, it's relaxing and a lot of fun. Google the best time to plant the seeds in your area. I started my herbs in the house. I have a few more I was supposed to start this year however I didn't because I've been in MD a lot more than Va recently. 6 to 8 weeks is usually the time for the veggies to start growing. Tomatoes need a trellis to grow up. That plant gets top heavy really quick.
