Copycat Hyvee Pumpkin Bars
Wet Ingredients
4 Large eggs
2 Cups sugar
1 Cup Canola Oil
1 15 ounce can Pumpkin
1/2 teaspoon Cinnamon
Blend well.
Dry Ingredients
2 Cups Flour
1 teaspoon Baking Powder
1 teaspoon Baking Soda
Blend until smooth
Bake at 350 degrees in a 10 X 15 jelly roll pan (I used 9 x 13) for 25-40 minutes or until the middle is fully cooked. Test with toothpick or knife. Let cool. Then icing recipe below.
Cream Cheese Frosting ( I used store bought Cream cheese frosting)
1(8 ounce) cream cheese
1/2 cup margarine
3 1/2 cups powdered sugar
1 tablespoon vanilla extract
