I made the Gingerbread Whoopie Pie as a cake in the mini loaf pan. I doubled the recipe and instead of filling, had Devon canned custard (2 points worth) with a third of the "cake" (1 point the way I made it). Can't wait to try it with molasses. It was excellent and hit the Christmas dessert spot. This morning I had my gingerbread bake. Used 1/2 cup of oats but could only eat a third of it this morning. I made the glaze with the sweetener and Williamsburg Ginger Cake tea (by Harney & Sons) since I had just steeped a pot. Oh man, it was amazing. Very filling.
