Felicidades, espero pronto ir a visitarlos.

It’s supposed to be eaten raw, not cured in lemon. Otherwise, it is ceviche. Aguachile is just fresh shrimp with lemon juice. As soon as they serve it, you eat it. Raw shrimp has a different texture than cured shrimp.

SIERRA FISH: The Pacific sierra also known as the Mexican sierra, is a ray-finned bony fish in the family Scombridae, better known as the mackerel family. More specifically, this fish is a member of the tribe Scomberomorini, the Spanish mackerels. Pacific Sierra is a prized eating fish, milder even than Atlantic mackerel and with excellent flavor - similar to Jacks but more delicate - but perhaps still a little too strong for the baby spinach set. ... This fish is mild enough to be used in recipes other than those specifically for mackerel
