I want to use one as a drums overhead (which is shown in the video but without sound!). Is it possible to decode to B format with an outboard analog converter in real time? Thanks

that's a Neumann KU 100 dummy head

That's the Neumann KU 100 dummy head (as someone else pointed out), which creates binaural recordings that have a great sense of directionality when you play back the recordings on headphones. What's different about AMBEO is that each direction is recorded separately, which gives some coordinate data that computers can use to create interactive binaural audio... aka, the recordings can be used with a VR or AR headset and the movements of your head will change the apparent position of the audio.

So what recorders exactly can 1 use with these? Would either of the 2 F recorders from Zoom do? Or the 701D Tascam? Or are we at Sound Devices level with this?

Well they're using a Zoom F8 in the video, so I would suspect that would be fine -- anything that allows you to digitally set gain to be the same across four channels -- and a preference to group the 4 channels to one knob twist -- I think there are options in this range starting as low as 500++ -- I use a Tascam HSP82

The Zoom H3 VR won’t let you record at 192kHz 32 bit float Iike you can with the Sennheiser mic connected to a field recorder in which you can record at those settings
