1:35 It's an indistinct dividing line, but generally for fried chicken "standard karaage" would be a short marinade so there's a mixture of seasoned and plain chicken flavors in each piece while "tatsutaage" (which is more like a subset of karaage) is a long marinade so that the chicken is completely flavored. So karaage is a somewhat "lighter" meal. Then chicken katsu is plain chicken fillets in a simple salt & pepper+panko coating (karaage uses potato starch) which is eaten with a sauce.
