I wish I could find this version on Spotify or some other site/service. Fred Holstein's version of Wabash Cannonball was the first one I heard and it had a pretty profound effect on me.

Fred Holstein was an American folk music singer. Holstein was a prominent figure in the Chicago folk music scene in the 1960s through 1980s.
