Back in the 70’s, my mom used to make this and she added diced chunks of roasted turkey. It was one of my favorite dinners. Thank you for reminding me of it!

My heart aches for those in the comments who are so put off by the concept of mayo and fruit that they won't try this. It doesn't taste like mayo. At all. It's like... a really light sweet cream.

Michaela Anne it’s kind of weird to be so absolutely against fruit and mayo. Many chicken salads have fruit such as apples or grapes or cranberries in them and they are coated with straight mayo.

LagiNaLangAko23 it’s also weird when people object to “hot mayo” recipes, ie recipes that have you add mayo to something that goes into the oven to cook. It’s literally just oil and egg, two very common ingredients in a lot of baked goods and egg dishes. Why should it suddenly become gross if that oil happened to be blended and thickened into mayo before adding it to a dish? And other people seem to equate mayo with dairy (even though it’s not) and that’s what grosses them out by heating it. But hello, cheese is actually dairy and is heated to delicious effect all the time.

Reminds me of a Fawlty Towers episode. I used to make this for my lunches. I work at home so if you minutes in the kitchen making lunch, making this for lunch, was always a treat. Never thought about using celery root. I'll have to try it.

My gr grandmother learned this recipe while employed at the Waldorf in NYC in the late 1800s. As a poor Irish lass she needed to learn to cook American fare and still today our family enjoys the holiday feast from the chefs of the Waldorf.Your recipe is a step up, many thanks.

Made this as a side for Mother's Day dinner yesterday along with lemon chicken, asparagus tips, and roasted baby potatoes--it was a hit! I had some leftover for lunch today and added cold chopped lemon chicken and it was equally good. I used finely diced celery as I could not find celery root. I used sour cream instead of creme fraiche, a little extra fresh tarragon and black pepper, no cayenne. Don't be weirded out by mixing fruit with mayo, it's amazing! Highly recommend!

As a US Southerner this is present at every Thanksgiving and Christmas and usually Easter and many other occasions :) And yes it is super good. And it always was present -- even when some of the fruit was harder / more expensive to get off-season. Who else remembers citrus being a huge treat in the winter?

I have been making a Waldorf salad for years. I originally thought that mixing mayo and fruit would be weird but it is not at all. Very tasty but I have never done the salad quite like this so I cant wait to try it.

I make this salad at least once-a week. So refreshing and delicious. I use fresh orange juice instead of lemon. So good.

Yay! I love seeing this. My grandmother would have approved. Although the apple would be diced finer, she'd use finely diced celery instead of celery root, and I think she put in raisins (not a lot). I feel like this is missing some other fruit or veggie ingredient, though. I'm fairly sure she wouldn't have used any black pepper or cayenne, and I don't know if friends or cafeterias use either pepper in theirs. Very nice and light for the summer, very tasty in winter. -- Do not be put off by the mayo. This is fine, and tastes light and is just enough to complement the ingredients, not to drench anything. Gosh, why haven't I fixed Waldorf salad? That's simple, I could do that. Dang, am I that lazy? Now I want some. Will have to add ingredients to my next grocery list. Thanks, Chef John! This rocks. It's a very Southern thing, I think, and popular in the 50's and 60's when my grandmother and then my mom were entertaining. I grew up with this often at my grandmother's or at the cafeteria. (I also like carrot salad, but don't have it often.)

Well done, Chef John! Beautiful salad, well-executed and presented. My wife and I were inspired just by your mentioning "Waldorf Salad" in your last video. Having recently gathered both walnuts and apples -- the prime ingredients -- we said, "Let's do it!" Ours was a little different. We had two Belgian endive left from a dish we had earlier, so Sophie chopped that, the apples, jambon de reims and some Comté cheese while I shelled the nuts. She also made a simple vinaigrette dressing. That was our supper. It wasn't the classic; it wasn't your recipe -- we made it before we saw the video; but, it was more than satisfactory. Next time we'll try yours.

Chef John, a friend used some windfall pears in her Waldorf Salad once, years ago....I rarely make it with only apples alone since then. The soft pear flavor marries so nicely in the tangy-sour of the original recipe.

@@conanclone A "Waldorf" is a famous hotel. The story we heard back in the 1940's and 1950's was that that Hotel Chef was asked to make a new salad for some important guest, and just threw together the stuff he had on hand. It was so popular that it became the traditional "Waldorf Salad" and everyone tried to copy it. I mentioned above that Mom always used black walnuts, (never English walnuts), green celery and never added the licorice-tasting tarragon. Take care. ;o) Donna B.

Chef John -- until I was an adult I made this with diced cooked chicken and thought that was Waldorf Salad - then, to my horror/chagrin I learned the original did not contain diced cooked chicken. My grandmother made it with chicken and called it Waldorf Salad and so that's what it was. I still like it with chicken.

A lunch counter I used to go to a lot before I retired added a couple of things to this salad - mandarin orange segments, and cubed cold chicken. Absolutely delicious and on the days they had it you had to get there early before they sold out. It's my go-to for using up cooked chicken or turkey.

My mom made this salad often all through the year. I’ve made it many times myself but with some canned fruit ie: mandarin orange slices, pineapple, peaches etc. which you can use fresh too. We always added a little pineapple juice too instead of lemon.

Hahah, people are put off by the mayo in a salad... This salad originates in Eastern Europe. In Poland we make selery root/apple salad with mayo, but we rather classify this as vegetable salad. Nuts, raisins or grapes make exciting blend. So, it is a vegetable and fruit salad.

HannaARTzink - We’re not European, but I grew up in a very diverse neighborhood. My Mom actually got this recipe while grocery shopping. It’s DELICIOUS, It was a different time. People/strangers actually spoke with each other, regardless of ethnicity, shared ideas, recipes, etc. Can’t do that anymore...😔

I love baby carrots and Ranch. My ex would give me crap for using straight mayo when we would be out of Ranch. I wouldn't use a lot, just dip them in to get enough for a little extra flavor. She'd always be like "why you gotta do that? That's disgusting!", etc. Finally, one day I asked her "what do you think the base of Ranch is?"

I had without question the best upload I've ever seen on Waldorf Salad and I've researched this subject for three years: KZbin, Vimeo, Dailymotion, Chowhound., and even VideoJug. I spent thousands of dollars to find what I thought was the best version of the classic Walfdorf. I was gonna make my upload a big star on KZbin...And let me be even more frank - Just to show you that I'm not a hard-hearted man, that it's not all dollars and cents: My clip was beautiful! It was pithy, it was informative and it was high production!! It was the greatest piece of video I've ever seen, and I've seen 'em all over the World Wide Web!!! And then...Chef Johnny comes along with his olive oil voice and *Guinea charm and upstages me with this masterpiece of culinary perfection. He made this clip just to make me look ridiculous! And a man in my position can't afford to be made to look ridiculous. Now you get this clip the hell out of here!! And if Chef Johnny Gastronauto tries any rough stuff, just tell him I ain't no sous-chef. Yeah....I heard that story. *(Guinea was used by a guy that's half Italian to another paisano. No offense was intended.)

The Waldorf salad at the Wicked Spoon buffet blew my mind. Everything was cut like matchsticks (which I prefer to these large chunks) and they didn't use a mayonnaise-based dressing, it was almost like a sweetened, cider vinaigrette. I'm still looking for the recipe...

Now I'm craving fruit and there isn't any in the house and it's almost midnight. This reminds me of a fruit dip I make with sour cream and a couple spoons of brown sugar mixed together. Then dip your apple and fruit slices into it and eat. So delicious.

My Grandma made Waldorf salad every holiday but this more modern take is better. I made a few changes based on what I could get. I cut the mayo in half & used plain yogurt instead of CF. Couldn’t find celery root so I used celery with red grapes & Granny Smith apples. I also substituted almonds because walnuts don’t agree with me. I loved the tarragon in this!!! I’ll be adding it to my chicken salad also. I served it as a side dish with quiche and it was perfect.

There was a time in the 60s and 70s where this type of salad was available almost everywhere. It's great but today is rarely avaiable. Mind you it's not a low calorie salad. Still an excellent treat. Thank you for the recipe.

I have used sour cream or yogurt instead of mayo, which IMHO makes this type of salad a nice breakfast food. I have also added chopped chicken or replaced the apples with chicken as an alternative. And it can be served on a bed of lettuce for a lunch or dinner...chilled makes it great in hot weather.

I make mine with regular celery( the only thing I ever use celery for ..) or I leave it out and add pineapple chunks instead. In my country we also use stiffly whipped cream added to the mayo, 50/50. Not sour creme It’s also common to use red grapes here to give the dish a Christmassy look as it’s normally served along with the New Years turkey .

We have a similar salad in Hungary (of course it isn't a Waldorf). Apple, walnuts, cheese, purple shallots (tastes sweet and looks good), mayo, sour creme, mustard, vinegar or lime juice, grounded pepper, salt, and sugar. Yummmm.... :)

I've personally never been into celery or celery root in Waldorf salads, so I skip that. But I do add pineapple, for added acidity and tropical fruitiness. It just does very well in there, imo, alongside the creamy dressing. But hey, you're the Berlin ballad of your Waldorf salad! :) And yes, walnuts are a must. I can't believe it when I see people make Waldorf salad without walnuts.

I make mine in smaller bits. I don't use celery root but sticks. I use apple and finely chopped walnuts not cooked at all. Then I add mayo. Mine is easy and wonderful. It's an old fashioned salad. Few make it anymore. Thanks.

Celeriac is amazing with other roasted, root veg such as parsnips, onions, swede, and beets. Wash, cut, salt, pepper, don't oil (no need) and roast. Turn multiple times as you continue to roast at 230C for 30 min again, and again, and again...total should be 2 hrs or so. AMAZING!!!

Apocalyps, Add turnips and carrots to that array and spray all with any butter spray (Crisco has that perfect fresh popcorn taste). I haven't added pepper, While roasting, turn once or twice to lightly brown the edges. You can eat enormous amounts of veggies this way, just like opening a bag of chips. I've never used Celeriac, but may try it one of these days. Take care. :o) Donna B.

what a coincidence, I had this for my dinner with pizza. Though mines had cabbage instead of grapes. Its now my favourite salad side!

I make this when I have leftover chicken breasts. I mix some curry powder into the salad dressing and coat the chicken with it, then toss the entire salad and serve! Makes an entire meal - wonderful, in the hot summer when no one feels like cooking!
