That's because of the editing, he is using a fixed point of view and focusing on a smaller part of the camera. As a result the grain/noise start to appear. This could be solved by buying a more expensive camera such as a7s3 or EOS R6 which will give 4K possibilities and the ability to crop significantly without much loss of quality.

Love your lessons - The female’s posture is incorrect. She should dance with a straight back, her posture is for competitive/show dance, I would not teach my students to follow this posture.

Completely correct, in fact it is poor even for competitions. They lack body tone for the kind of work they attempting, a less pretentious but better balanced hold would be far preferable.
