Škubánky, also called kucmoch, is the Czech national potato dish. Škubánky used to be a common part of menus not only in households, but also in schools, kindergartens and canteens. Just 30 years ago, almost every housewife knew about škubánky. Today, škubánky are experiencing a renaissance and are slowly returning to households, where typical Czech cuisine is starting to be cooked again.
The right škubánek is mixed until smooth, slightly sticky and served with poppy seeds and sugar greased with lard or with fried onions or just poured with melted lard.
