Apple pancakes
1 kg of apples, peeled from the core
3 eggs
6-8 tablespoons of flour,
2 tablespoons of sugar,
a pinch of salt, vanilla.
Use the type of apples that do not fall apart when cooked, but retain their shape.
Grate the apples, add 3 eggs, mix, add flour, until the consistency of thick dough, I added 7 tablespoons of flour (if the apples are hard and do not fall apart when fried, then you can add less flour)
Mix everything well and fry like regular pancakes.

I made apple cider vinegar according to this recipe.
1.5 kg of apples (peeled from the core)
1.5 kg of water (regular water from a well or tap)
1-2 tbsp of honey
Grate the apples, add 1-2 tbsp of honey. Put the apples in a jar, not reaching the neck (to the shoulders), pour 1.5 liters of water, cover with a cloth napkin and leave to ferment for about 10 days. Stir the apples several times a day, releasing gases.
After the apples stop fermenting, strain them, squeeze out the pulp well.
Pour the juice into a clean jar, add 1-2 tbsp of honey and leave for at least 6 weeks. Put the jar in a dark place, having previously covered it with a cloth. Do not touch the jar with apple cider vinegar anymore. After 6 weeks, the vinegar should become clear, sediment should form at the bottom, and the apple mother should be on top.
