"Chili colorado" is chili made with red peppers. "Chili verde" is made with green peppers. The word "colorado" means "colored red". It refers to the color, not the state of Colorado.

My great aunt from New Mexico used to bring us a couple 100 lb. bags of green chili, we'd roast it on an open fire, and then mom, great aunt, sister and I would peel green chili until our hands burned, and whatever you do don't touch your face of that would burn like crazy, but boy that green chili tasted so good with a fresh homemade tortilla, refried beans, fried potatoes, Mexican rice, on eggs, heck it made everything taste better.

Loved the timelapse of Chaudhary finishing his lol. Gull Sher seems even more dignified and thoughtful since his pilgrimage. Dr Tahir is spot on when he waxed poetic about inter love between countries, and food being a bridge for that! Mr Asif is a great addition to the group, his genuine reactions are fun

This is a very good dish! People eat it with flour or corn tortillas. Sometimes cornbread. My friend made this dish with fresh green chili's she bought at the farmer's market. She invited me for dinner. She accidentally got the hot green chili! She had to make spaghetti for her husband and daughter. We ate it with flour tortillas until sweat was running down our faces! LOL It's nice on a very cold winter day.

The Hatch's roasted chilis are in season now! In CA, it's hard to find the mild chilis- they always only get the hot ones, which are usually super hot.

I'd like to thank Tahir Sahib for telling us about the adventure novels he enjoyed as a kid. I managed to find #60 in the series by Ibn-e-Safi, called Poisoned Arrow in English. It was a fast, fun read and I could picture it as a Bollywood adventure comedy!

Joan's right. Green chilies are a New Mexico State thing and what they're eating is Chili Verde... green chili stew. Chili Colorado is a medium spicy RED chili dish, usually a simple stew of beef or pork slow braised in a thick red chili gravy with onion and lots of garlic and spices. But green chili IS a popular thing here in Colorado. We most often don't stew it with potatoes, but rather serve it on rice, with a side of refried pinto beans and tortilla flat bread. The real deal, straight from heaven...my mom's Chili Colorado recipe: 4-5 dried ancho chiles , or pasilla or mulato (mild spicy) 5 dried guajillo chiles , or New Mexican chiles (med spicy) 4-5 cups chicken broth 1 med onion , chopped 6 cloves of minced garlic 1 jalapeno, minced (optional, for more heat) 2 teaspoons dried oregano 2 tablespoons ground cumin 2 tablespoon smoked Paprika 2 ½-3 lbs stew meat , beef, pork, goat or venison Salt and pepper 3 Tablespoons flour 2 Tablespoons oil 1 bay leaf Juice from l-2 limes Cornstarch slurry (2 Tablespoon cornstarch mixed with 3 Tablespoon water) Remove meat from fridge and cut into ½ inch cubes. Set aside. Remove the stems (and seeds if you want, for milder heat) from the dried chiles while rinsing them under cold water. Place chiles in a saucepan and cover with broth. Bring to a boil, then reduce heat and simmer, uncovered, for 20 minutes. Meanwhile, prepare the meat. Season on all sides with salt and pepper and sprinkle with flour. Add oil to a skillet over medium high heat. Once hot, add meat and cook until browned on both sides. Depending on the size of your pan you will need to do this in a few batches to keep from overcrowding. Remove meat to a plate and set aside. Add onion, garlic and jalapeno to the pan and sauté for several minutes. As the onions cook, pour the softened peppers and the broth into a blender. Add the sautéed onion and jalapeno and blend until smooth. Set aside. Return browned meat and juices back to the pot. Strain the chili sauce from the blender through a fine mesh strainer, into the pot. Add oregano, cumin, paprika and stir well. Add bay leaf. Bring to a slow boil, then reduce heat to low, cover and simmer for about an hour, or until the meat is very tender. Uncover and stir in lime juice and cornstarch slurry. Cook for a few more minutes, until the sauce has slightly thickened. Serve as a stew with tortillas for dipping and a side of rice and beans. Please feel free to Try out Adria's recipe.... She topped it with a dollop of crema (sourcream), minced chives or spring onion and a wedge of lime for squeezing over. it's the best ever!

Green chile like this is Chile Verde (verde means green in Spanish). Red chile is Chile Colorado (means colored red in Spanish). Both styles are traditionally from New Mexico USA and are often eaten with round flat bread called tortillas

My grandpa and grandma are both from India and they used to make a massive pot of curry every weekend for our families that would go to their house (20 or more people). I loved going there because their curries they made were made the traditional way, where it was cooked slowly over many hours (I think it was like 8 or more hours) to lock in the flavour. Just walking into their house, the curry smell would make you instantly hungry because you just knew what you were getting to eat later in the day! I just wish my grandparents were srill here, as those days were the absolute best! Great video guys! Thanks for the trip down memory lane!

Churches, firehouses, neighbors, often have "chili cook-off" competitions here - in every town in America. Everyone thinks theirs is the best and takes great pride in it. Each person will bring a huge pot of their chili, so everyone can try it. Cornbread is a must if you live here in the southern states, but my family often eats it with rice, too, or as the base to cottage pie! Love you all 💚🙏🕊

I HAVE to correct you. Green Chiles are the official state veggie of NEW MEXICO. They are famously grown here in Hatch, New Mexico & its where this dish originated. (although Colorado & Texas have been trying to steal it for decades) We roast & peel them in the Fall & use them on everything from eggs to ice cream! They come from Mild to extra Hot!

You are correct. I lived in Santa Fe for a while. Nothing Colorado comes up with can compare with authentic New Mexican. They now roast Hatch Green Chili in grocery stores throughout Oklahoma. I always stock up.

@@kenthefley2226 may I ask what is sold in stores with the green Hatch Chilis? Where I live, we would roast them and mix it with different foodstuffs prepared. Pineapple salsa, cheeseball, mac and cheese, salsa, hummus and soup. I honestly like the cheeseball option since I am a complete wuss with spices.

@@urbanurchin5930 Many of us, including these Muslim people, Adventist and observant Jewish people do not eat pork because it is an unclean meat. Many other people do not eat it because it is so high in fat. For those who miss bacon & sausage there are very tasty and healthy versions of turkey bacon, chicken sausage etc! I have had very excellent turkey Italian sausage - I highly recommend it. There is not only one correct way!!

CO is a lot of good things, but the truth is 'New Mexico Chile' is the Gold standard, CO has another fine green product, but Chile, Red or Green ? Leave that to NM, it's their Biggest Cash crop. Goes back centuries, to the Aztecs, not the CO Gold Miners.

Here in Colorado we make it with pieces of pork, chicken or no meat i make it with Hatch green chilies so its hotter than the regular i can get at most restaurants

Being from Colorado and our city is known for growing Pueblo green chilies. We even have a festival in September honoring those fragrant beauties. We put it on a lot of foods, Mexican, hamburgers ( sloppers), mashed potatoes. Great with tortillas. It can get very hot and can cure ulcers by burning them. From this Colorado resident I love to watch your channel.

I loved going to King Soopers in the autumn and smelling them roasting in front, the best dishes I liked were the tripitas and chiccharones Hatch chile tacos and burritos I used to get in Longmont. Nothing like it!

What humble and honest people; very refreshing to see. Does anyone else think that Mr. Sher Khan look a lot like Moses (in the “Ten Commandments “ movie) after he met with God? His facial hair has that great salt and pepper appearance giving him a much more dignified and wise look. As for the Colorado concoction, I have never heard it called this and seems to be a variant of traditional beef stew we consume here in Pennsylvania. This is actually most famous from New Mexico called Hatch green chili. Colorado is not know for this chili but it's very famous.

In Colorado we eat this with a bread called a tortilla, very similar to roti. Often we don't use the spoon, just scoop the stew with the tortilla, maybe add onions or cheese to the top to cool the spice. These guys are right that it is very similar to a curry. Many families have their own recipes for this, as do many restaurants. It's often used as a topping for other food, like burritos, breakfast, burgers, even fried potatoes or corn chips.

There's even a restaurant that will serve green chili on top of a hot open-faced turkey or roast beef sandwich with mashed potatoes. To me it sounded a little strange until I tasted it...I can't imagine eating it with gravy now, it's got to be green chili! Also, smothering an omelet with green chili is amazing.

What did India use before chilis were available? Before 1500 or so, they were only grown in the New World. So many of their "traditional foods" are relying on an imported ingredient.

Green Chili products ARE delicious ! I love ❤green enchilada sauce and I am from NJ. Hopefully this spreads understanding of Americans in Pakistan. We have Pakistani food here in the US. Its good.

Excuse me?!?! Green chile is officially from New Mexico!! Colorado is like the bad little sister always taking what is not theirs from their bigger and better sister which is New Mexico...lol!! Chiles originated in Mexico and made their way into New Mexico and later began to be grown in Pueblo County in the early 1900s. The families of some of the early farmers are still growing Pueblo chile, including the DiSanti family, which started farming on the St. Charles Mesa in the 1890s.

One of my favorites...yum!😊😊 If you are doing specific American states most loved dishes, I'm from Utah and ours is funeral potatoes 🤤🤤🤤🎉 it is a traditional LDS dish for funerals but you can have it anytime! Oh Soo oOoOO good
