Could I leave a few grains in the 2nd ferment to have it ferment quicker? Like a day instead of 2-3 days? So for example: Do first ferment, take that liquid and a small portion of newly grown/created grains to make a 2nd ferment with some fruit, that ferments in about a day and I drink it, meanwhile the first grains from first ferment I just refill back with water and sugar?

Jing Banduch hi! Sorry for the late response! Yes, elderflower would be great! It really is to your taste for flavoring. For a liter I’d say 1/2 cup or so. You can increase the next time if it’s not enough.😊

Hi- only use fruit in your secondary ferment, after grains are removed. Citrus is great for flavor, and any other fruit combination you like. We use organic evaporated cane sugar, blond in color. You can supplement with darker sugars or molasses if your grains need extra minerals.

YOW Gyrl you can let it go longer- but the flavor will get less sweet & more alcohol- tasting the longer it goes. It can also run a greater risk of exploding over time, so be careful!

Travel Bees water kefir can have a trace amount of alcohol (about .5%) after just the first fermentation. Second fermentation can increase the alcohol, depending on the sugar content of what you add (coconut water isn’t terribly high). Half a percent isn’t a lot, but something to watch out for if have sensitivity or allergy to alcohol. Sticking with just a first ferment can help keep the content lower. You can just mix it with your coconut water but don’t second ferment. This will flavor it while diluting any alcohol that may be there, and won’t increase it. Hope this helps!😊

Travel Bees don’t use a closed lid for first fermentation- the grains need to breathe. If you want to use coconut water for first fermentation, it can deteriorate your grains over time. We recommend you only do that if you have excess grains that you can spare.

depends on how many days you let it sit at 2nd fermentation. I usually go between 2 or 3 plus the time in the fridge which I think it stops the fermentation due to the temperature. So you can try it, if it's too sweet do 1 more day etc.

So I take it that you rebottle and filter the finished product? I do the 2nd fermentation in 16 oz bottle but am having issues with floaters and debris in my drinks. However I don’t want to loose my carbonation. What do u recommend

If you water kefir is a little too vinegary, you can try fermenting it a little quicker. We recommend changing into fresh sugar water every other day. Taste it after one day or day & 1/2. You can drink it when the taste is to your liking. Ferments longer than 2 days will definitely become stronger tasting. Same with a second fermentation, longer than a couple days will become more vinegary.

Kimberlee Leix hi! The alcohol content is pretty minimal after the first fermentation- .5 (one half) percent. Not really enough to affect you unless there’s an allergy to alcohol. Where the alcohol content can increase is when you add additional fruit or flavoring in a second ferment. Still not really high enough to get drunk. If there’s a concern, don’t do any second fermentation that adds additional sugar. This is when the content can increase. You can also dilute your finished kefir right before drinking with water or juice. We feel it’s pretty safe, but everyone has a different comfort level. Hope this helps!😊

Either way is fine. But- the fruit will continue to break down & has already contributed the flavor. Removing it will avoid mushy floaties. You definitely can eat the fruit tho or add to smoothies. It takes on a great effervescence. Apples in particular are really good after a second ferment.👍🏼

Nadine Hamburg for lower sugar, lemon & ginger are great options. We do the second fermentation in 1/2 gallon jars, then remove any fruit before refrigerating (just for looks, the fruit is great but gets mushy). We don’t do smaller bottles, too much chance for explosion and more of a hassle. You can pour into a to-go bottle as needed👍🏽

GOODVIBES be careful with smaller bottles, they can explode easily. We’d recommend second fermentation in larger containers, then put finished product in the smaller bottles. And keep refrigerated once in smaller bottles. Sorry for the delayed response- good luck!🍀
