Ok, so add fruit and kefir to a blender , 1 to 1 ratio. Blend it, add to a glass jar with a lid not tight. Let it sit,at room temperature, about2.5 hours. Put it in the fridge, where it sits for 24 hours. It's ready to drink.

Ever since I learned how to make kefir smoothies, my three year old asks for a kefir smoothie every single day and I help him make it! A second ferment is such a great idea. It also means you can make the smoothie ahead, like in the morning or evening for the next day and it will be ready when you are. You can't really do that with a normal non-fermented smoothie XD Thanks for the great videos!

Ohhh that looks sooo good! I'm just getting started with kefir and kefir grains haven't even arrived yet. I'm dreading trying to figure our how to manage everything, as I'm wanting to do a bit of everything. Drink it plain, secondary ferments as "treats", kefir "sour cream replacement", and even kefir cheese (quark)... all in limited refrigerator space. Along with working a 10 hour work day. Wow. What a challenge. And now you've added one more thing to that list! :)

Freezing will affect the amount of probiotics in your kefir. Cold is good but frozen might not be as good.

@ironrose888 Yes , that can be true if you leave it in the freezer for longer than two months! I put my sourdough in the freezer for a month or two and it seems to be ok. Some strains of bacteria seem to be stronger than others👌⚖️

Hi, loved the video. Only a few days ago I started to grow some kefir grains I bought online. I thought I had bought pasteurised milk, unfortunately it was UHT.! In my country, where I live, raw or pasteurized milk is never seen in the groceries and I have no near by farmer market or farm to get milk. I think my grains will die because I have no proper milk to feed it. Could you advise on whole powdered milk, if that is a viable option.

Yes, from the comment I removed the grains and started another batch of kefir. I keep kefir grains going all the time because I have jersey cows. (lots of milk around here). I ferment 24 hours then strain and start a new batch first thing in the morning.

You can just take an orange peel or just one strawberry or something and put it in your fresh kefir then set it on the counter for about 30 minutes then put it in the fridge for another 12 hours… holy cow it’s amazing… the second fermentation is the only way to go!!

Great video thanks and I was wondering about the heat in a place when they are on the counters of your kitchen as we are going into a heatwave so it is this bad? The other thing I was wondering about is this lady was kind enough to give me these Keifer grains but it had a hair in it. I am sure she didn't do that intentionally but still, there was a hair in it. Does this mean it's not good?

Yes, we are in quite a heatwave therefore fermentation will speed up. Finding a hair in your kefir grains is undesirable but I would rinse them in filtered water and maybe ferment and discard a few times before I would drink it. I totally understand because I am very picky about cleanliness.

If the temperature of the room is higher, you have to ferment it shorter time. Instead of 24 hrs, put it into fridge after 12-18 hrs. Play with it - go by taste.

@@vickiehat1074 for a start all canned food has a plastic lining and cooked in the can. Plastic has forever chemical so you dont want that in your body. Try blend real coconut in water in a blender. Look on KZbin and it will show you how to peel, open, scrape or remove the flesh out. Very easy and quick once you know the correct techniques.

Milk kafir grains are different from water kafir grains. Milk ones require real animal milk only because they need lactose to eat. So I think you might be drinking spoiled coconut water and not kafir. Do some google research.

I purchased my grains from Cultures for Health. I am sure there are other options but back when I started they were hard to find. If you know of a raw milk dairy they might possibly make kefir and be happy to share grains with you. I share my kefir grains all the time. We haven''t noticed that kefir causes weight loss. We use our Jersey cows full cream milk with our grains. Mr. Rueffer is very thin and he drinks one quart daily and he thinks it helps his gut health. Thank you for watching!

No, bacteria and yeasts are not cut in half in blender. But - adding fruit - you consume fructose. Apple has more fructose than corn. Drink kefir plain, do NOT Americanize it.

Just add a small amount of kefir to fruit and blend them first , then add more fresh kefir to it then ferment as normal, that way may help to reduce the losses of benefits of kefir. That's what I think 😊

If you are fermenting your own kefir try using fewer grains or a shorter fermenting time so your kefir won't be so strong tasting. Adding more fruit might help as well. Kefir can be a taste that has to be developed. Once we had a taste for it we enjoy it plain as well. Thank you for watching!

Your grains are overgrown with yeast. Wash them VERY GOOD IN MILK, so that they look like a nice cauliflowers again. Use less grains or more milk or shorter time or lower temperature. You kefir has to smell nice and fresh.

It should never taste or smell like cheese. Just fresh and sour. Clean the grains really well in between -,on plastic colander with plastic spoon or wash them in a little milk and drain well - shaking the colander well while stirring. Temp too high or time too long or too much grains. - 1 tbsp per 1 l is enough over 24 hrs, On 69-72 F.

Thank you for watching Robert! Glad to hear you made your own sourdough starter. To make starter you will need kefir grains or a packet of one time use kefir cultures. I prefer the grains because you can use them daily, they multiply to make a never ending supply of grains. You can buy grains and rehydrate them yourself or sometimes you can find someone who has them and will share. I bought my grains from Cultures for Health.

Extended time doesn’t not make kefir less sour. The grains' lactic acid bacteria turn the milk's lactose into lactic acid. This is what makes kefir taste sour like yogurt . The longer exposure, the more sour. There is a good reason for that tangy taste. What you're tasting is butyric acid, a short chain fatty acid famed for its distinctive scent, its bite (butyrate is what gives parmesan cheese its flavour) and most importantly - its anti-inflammatory health benefits for your gut. Additionally, carbon dioxide produced by the yeast flora contributes to its sharp acid and yeasty flavour . In summary, kefir should have a tangy, slightly sour smell and taste, a slightly thick and creamy texture, and may separate during fermentation. If your kefir has an unpleasant smell or taste, is thin and watery, or has curdled, it may be a sign that it has gone bad.

Great video but the music was too loud. When I turned the video up so I could hear your voice better the music was very jarring to my ears.

How much kéfir do you usually drink? How much is safe? Mine is so so tangy I added pineapple and honey and it's still so tangy 😂😵

Usually I drink about one cup and my husband drinks about one quart daily. I would definitely start with one cup. If your kefir is too tangy then maybe you can use less grains when culturing the kefir. This time of year kefir ferments quickly and becomes tangy faster so I use less grains than in the winter. Adding a banana might help as well.

Yes, you are correct this is a very fast ferment. Ambient temperature will play a large role in the rate of fermentation. If I dare to add anything other than cinnamon or vanilla to my 2nd ferment my kefir goes nuts, separates and promptly basically turns into cheese My grains are HUNGRY. I tried adding cacao powder and got chocolate cream cheese 🤣😖

Do you second ferment on your counter? If so, trydoing it in the fridge. That way you should be able to catch it before it separates. Or use less fruit for your second ferment, then make the smoothie adding more fruit.

I don't know why it drives me bazonkers when people say [KEY-fur] but it does. Kefir grains originated in the middle east - as does the word 'kefir'. It's pronounced [kuh-FEAR]. It's not that important unless you want to sound like you know what it is or what you're talking about. It's like moving to a new city and mispronouncing the town you live in. If it were me, I'd want someone to tell me.
