CTRL, Shift and E brings up photoshop. I also dont seem to get the same export screen, I just get a little bit on the side which has less options and doesnt give my the option to change image sizing. Any help with this would be great!

You might be in the wrong Lightroom version. Make sure you’re in Lrc

Video felt very rushed. Why was resolution set to 72 pixels per inch? I've seen some videos recommending higher number like 200. 72 seems pretty low for 2024 devices which are so high in pixel density.

Resolution (PPI) only matter when printing photos. Try to export a photo with 72 and with 300. They will be the exact same size. :)

Rubbish. The Lightroom 4x5 crop still cuts off edges of the image when uploading to Instagram and Ctrl+shift+E opens the file in Photoshop. Pointless video.
