既に繁盛店ですが・・料理に対する考え方、取り組み方が素晴らしい女将さんです。 このようなお店は長く続いて料理屋の基本となって欲しいです。 １．金儲けがしたいから飲食をやる（利益を上げたいがため安い材料を使う）２．美味しいものを提供してお代をいただく。 この2択には志が決定的に違う。近頃は「１．の飲食」が多くて外食の気が萎える。

ここは本当にうまいです。モツカレー最高。全て食べたけど、全て美味い。 余りに混むから、ここ1年は行ってないけど、そろそろ行きたいな。 女将さんも大変なのか、結構お休みも多かったしして、動画みたら従業員来てくれたんだと思って、良かった良かった。

I just watched another video an hour ago of a 97 yr old Japanese lady who runs a restaurant up in a mountain somewhere. She opened it after the war. She makes soba noodles. She’s on her own but when she’s busy her son helps. She still carry heavy pots and do kneading of the soba. She’s truly incredible. So I’m thinking if this gorgeous young lady might end up like that amazing woman and her restaurant it up in the mountain.

2:45 　廃棄問題は重要ですよね。　仕事で、飲食店の廃棄物量の確認してますが、とある店だと、一日の顧客の飲食量とそれに伴う廃棄物排出量で見比べてみると、えげつない廃棄物量なんですよね。つまり、手付かずの飲食物が廃棄されてます
