I love this chef, he just seems so dedicated to not just creating a beautiful dish, but really sealing in the identity of his terroir within the dish he makes. He wants to have that connection between his recipes and his homeland, something that is not always a guarantee in the world of gastronomy (the newest 3-Star in California, Addison, is a lovely place to eat based on my latest visit but is basically a high-end Japanese restaurant, not an ode to California as Chef Bradley assures everyone it is). Every ingredient has its place, and the result is truly wonderful!
