I just broke down my first chuck roll, it was not perfect but your video help. I did come across a section that was more toward the neck that was marbled like wagyu beef I cut it into steaks.

Learning how to do this myself and finding there are many different cuts you can make depending how you cut. Like you could of went for a Sierra steak by peeling the top end but then your chuck steaks would of been smaller. It's all about preference once you get used to it. :)

Yes it is! Typically we don't even cut for the Denver steak but for the video we did just to show where it comes from.

Does the Denver section extend the entire length of the chuck roll? You mentioned that you could have gotten more denver steaks if you wanted to. Does the quality of the denver decrease as you get closer to the neck end?

It depends what you are going, for. That would be up to you to determine have marbled you like your denver steaks and how much meat you are able to sustain.

We think there are too many great cuts for it to be used all for stew meat, but that would be an excellent tasting stew meat.
