What was the oven temperature and rack position(s)? Thanks!

The oven was full tilt or about 500 F with convection. The Baking Steel was placed around the second to top rack or about 7 inches from the broiler...I hope this helps... andris

A Neapolitan dough doesn't use any form of sugar. Usually, they're supposed to be cooked in ovens able to reach over 777°F at minimum for at least 60 to 90 seconds. Besides, it's still possible to cook a pizza dough in a traditional kitchen oven without sugar/honey etc. You can either use the part bake method or use a long cook process by not using the broil until the dough gets brown enough in order to prevent burning the toppings.
