I am sure many people do this but I think the key to reducing food waste is to have a good pantry of dried goods and spices and canned items that won't go off quickly, and then shop sparingly and regularly for fresh ingredients that have the most versatility and that can keep meals interesting. I know everyone's time is limited, but if you have a local little fresh food market, think about what you are going to make for the next two days and buy only those items, instead of making a massive week long haul - at the end of the week you are bound to have to toss some spoiled items, or you will just get bored of them. Plus it is an opportunity to support small fresh market shops if you are lucky to have one close by on the way home from work. Fresh items that work in both cooked and raw salad applications are great so that you have options. Cooked chick peas are excellent - in curries, salads, fried with chorizo until crisp, made into hummus. Use scraps to make stock and freeze flat in ziploc bags, labelled. Labelling frozen items is important - it is so annoying to have no idea what something is later on and then you probably toss it.
@magsimags2 жыл бұрын
to me a large freezer is key to reducing food waste. but maybe that's just because i don't have a large freezer and you miss what you don't have. if i have chicken or other meat that's gonna go off soon, then i can just freeze it for months and months. same with a lot of produce. and depending on how i use it, it won't matter if it was frozen
@RayF61262 ай бұрын
@@magsimagsI'm in the US, so my answer comes from that perceptive but meat is packaged here for 4 person servings so I know my grocery store at the meat counter seasons single packs of chicken breast, bacon strips, pork loins, and beef chuck. I can get enough for two people at the counter.

I'm American. My family carves our pumpkins just a day or 2 before Halloween so we can cook it after wards. I put the puree in the freezer and label which kid's pumpkin it's from so that the kids can know who's pumpkin goes into the recipes were eating. They love knowing.

Carving pumpkins is a Halloween tradition and really fun for my kids. They're right at the age they ask to do it every year and I love seeing the joy
@laurensteenkamp7693 Жыл бұрын
It's worth noting that where there is somewhat a tradition of families going to a farm to pick a pumpkin (or several), take it home and carve it in the US. That is not the case in the UK, indeed the whole 'US style' Halloween thing is a relatively (15 years or so) new concept. Thus you get wastage at all parts of the supply chain, at farm level either the pumpkin's not supermarket (most Brits buy their carvers at a supermarket in the days/ week running up to Halloween) perfect* or aren't ready to be to be taken off the vine. Then at supermarket level, most of the household names (e.g Sainsbury's, Tesco etc) tend to over order the perfect pumpkins from the farms and therefore it is still possible that you can get whole ones a fortnight after Halloween, at a reduced price of course. Then finally at the home level, as pumpkin is a relatively new vegetable to the British diet their isn't an arsenal of recipes (bar soup) for people to make. And before anyone comments about using the Internet; 1. Some of the other ingredients from recipes found on the Internet (particularly those from the U.S) are almost impossible to find in the UK. And 2. The variety of pumpkin most often grown in the UK is reasonably wet inside so using it in baking is not advised unless your a reasonably skilled baker, also if you walk down the international food aisle/ look at the shelves in the inf section of any British supermarket (superstore and average size/ small respectively) you'll likely find a few tins of Libby's Pumpkin pie filling anyway *= all the big supermarkets have a set of 'aesthetic standards' they use when buying fruit and vegetables from growers, since a year (pre covid) when the weather was less than optimal and vegetable harvests were lower the supermarkets have gotten better. Most now do sell whole less than perfect vegetables to their customers (at a reduced price) rather than souping or pureeing it

Jamie will tend to go with a weird twist that kind of makes sense from a normals perspective. Mike tends to either think big but can't reach it or goes as straight as it goes. Then Barry will start playing poker with UNO cards. Each might be good, but their cooking shows their unique personalities and upbringing. *Also Jamie is closer to my own cooking*

I have designed a spag Bol base, that can then turn into either a spiced cottage pie or a chilli or even a beef tomato and veg soup. If you make a big batch of the base and freeze in portions, you can then take out a portion and alter the flavour as you go. Also, if you have any red wine left over, freeze it in ice cube trays and add one or two to the spag Bol or maybe a stew. If you do a slow cook beef, turn it into a pie by just adding a ready rolled pastry on top, egg wash it and bake it. If you don’t want to buy a whole bottle of wine for a recipe, you can buy red or white wine stock cubes.

Jamie gets my vote, especially if you consider that at home, ya you want to have dinner ready in 30min but does it really matter if you go a minute or two longer? No. So it would've been really good.

I agree. Baz as the runner-up made a well-executed, but ultimately confused dish that focused more on using up ingredients than being "good". Mike's dish looked amazing, but the pumpkin seeds were a critical error, and from what Ben said, the pumpkin was undercooked as well. Jamie's, on the other hand, was perfectly executed, and gave and interesting twist, while using the ingredients, and really his only issue was his mistake with the oven that meant that he couldn't cook out the raw garlic on the bread. In a real weeknight cooking situation, you could wait an extra 5 or 10 minutes for garlic bread.

Barry, saying "Sorry Italy" before breaking spaghetti in half is like Spaff saying sorry to Spain before making a paella burrito. We don't accept.

I think Jamie has secretly sneaked out of the normal category and is creeping his way to chef territory...

I do this all the time as a student. Can’t afford to be throwing food away (unless it becomes a biohazard 😂). It’s all about knowing what you have and creating a meal plan/shopping list around that.

By the end of the episode I knew that Barry's Jerking Cream was gonna give Jamie the win.

This reminds me so much of Food Battles. I do miss those as well so this really filled that void.

14:41 Lots of insightful discussion going on while Mike's sipping a Capri Sun in the corner. The man is definitely our spirit animal.

I think you could bring this back as a 3 part mini series/challenge. Get what is in each of the normals fridges and in each episode everyone cooks from the same fridge/bag. 1 point for winning and 1 point for beating the owner of the bag

The 101 ways a Shakshuka can go to are overwhelming. However, it's always heartwarming and very rewarding, plus it is so easy to make. I'll choose it over any confused dish anytime any day.

Barry's 'end-of-week' fridge is so much better than many whole-week ones. I wonder what they would cook with the contents of a fridge of someone who is struggling.

This is kinda why I don't really rely on hard recipes for cooking. I like to make a plan based on what ingredients I have on hand, and try to prioritise fresh ingredients that are closer to spoiling. It also helps having solid bases to fall back on for easy meals. For example, you can take instant ramen and add fresh ingredients, and an egg, and you'll make it good and still relatively healthy. And there are some ingredients you can basically just throw in anything and it will be good. There's also knowing different ways to cook certain ingredients that will add punches of flavour to a dish. Like cheat-caramelising onions (Frying off onions on a medium-high heat, adding salt and a fair amount of sugar, once the onions have browned and are starting to burn, you add a little bit of liquid to deglaze the pan) takes like 10 minutes and is a quick and easy way to add so much flavour to a dish. Or adding salted tomatoes. And knowing how to balance flavours as well, like knowing when to add a bit of acidity, or a bit of bitterness, or even a bit of spiciness to improve the flavour. I don't have formal training or anything, is that not how everyone cooks?

I am a non chef, but I always buy all my groceries with a plan, and I food prep a lot at the beginning of my week so everything is easy the rest of the week; i have really minimal waste, but i still get a lot of ideas from watching you guys.
