I literally dug a 5 gallon bucket of sweet potatoes from 2 sweet potatoes I had put in the ground in August for slips. Midwifery duties called and I didn't ever get back to the slips. So yesterday I began prepping the Terrace for spring. I was blown away at the potatoes. Beautiful crop. God is so great.

I have a carrot farm close to me..when they take the harvestor through the fields to harvest the carrots, I'm allowed to go through the fields and gather any, and all of the carrots left on the ground, and believe me, we get tons of them 👍👍

The rolling seats are awesome for back injuries as well as knees. Also if you're short of food you can dehydrate the carrot tops and grind up add to smoothie soups or stews. High in vitamins.

Wow, Danny.... Here in NWArkansas, were having deep cold then 60 degrees. 5 at night and 50 in the day. Then 20 in the day then 50-60 the next day..... Anyway, I have 4 beds of carrots under plastic thanks to you encouraging me to try something new. So far so good!. I think I'm going to get another layer of plastic over them soon, just to be safe. I'm glad you can harvest some, mine are a foot tall, thick and lush, but nothing under ground yet, so we can't harvest. God is moving across this land, and you're being a wonderful steward of what He's given you!!

@@DeepSouthHomestead Yep. Went by there in 2019, for a football game, and they've really added on to it. Woodie's takes up the whole corner now. I'm glad to see they're growing in Noxapater. I live about 7 miles from town in a small community called Standing Pine off Hwy 488......On the way to Madden from Carthage. Really good growing ground here. Anything I plant seems to do well. Except corn but, I think it might be me that's the problem. I'm still learning to grow things. My granny is 96 years old. She said I need to lay a line of fertilizer down the middle of the rows when it starts to make. So far, her advice has been spot on so, I think I'm going to try again this year and do as she says. I remember having truck loads of corn to shuck when I was a kid so, I believe her. LOL. Ya'll be good and have a blessed day!

I have one of those seat cart things. After a few years, the tires kept losing air, so hubby bought and replaced all the tires with the no-flat kind. Good as new, almost 12 years later. There's also a sitting & kneeling thing that you can flip that has padding on both sides that is really great for gardening. When kneeling on it, you can use the legs as handlebars to push up on to stand. I use it in the rows that are too close together to use the rolling cart thing.

Thank you Danny and Wanda for the warning to pull the remaining carrots out of the garden. I live in North Carolina where we are getting ice and snow tonight and tomorrow. This is my first year with good carrots in one of my raised beds. As soon as I saw your warning, I rain out in the rain and pulled the remaining carrots in my garden. They look great. I will work on using them fresh in my salads and canning some of them up tomorrow even if we loose power. I had heard that they are sweeter if left in during the cold. I tried some a few weeks ago and they were sweet and delicious. Thanks again.

I haven't had any if that salad in a long time my mom and grandmother use to make that. We always ate fresh back then either from the garden or the creek. My pop loved three finger bream. I dont know if this would help anybody, but we built an insulated garden bed with foam board insulation sandwiched between hoards. We left 8 inches up top for a cover with additional insulation that we can insert on top for our carrots. Pricey, given that carrots are $.69 a pound. It's been great for potatoes too.

@@DeepSouthHomestead - I didn't think of that. I'm a northern transplant. Boston to NC 17 years ago. So far, no fire ants in the beds. We moved to the NC/SC line earlier this year, and had to take pretty drastic steps to get rid of them. There were mounds everywhere. When there are just a few I pour boiling water down them, but this required a chemical option

Here in north TX I mulch my fall carrots heavily (6+ inches) with leaves before the first freeze. I harvest fresh carrots, as needed, (no major harvest, I store them right where they're planted) all winter, no matter how cold it gets, even when the greens die back. Mine are in 30" raised beds.

Grandparents would leave root crops carrots parsnips turnups rutabaga spuds in the ground just cover with straw and tarp so stay dry and would go out and dig just what needed all winter long -0 temperature and colder snow cover actually insulate from freezing

Adapt and adjust....I too now resort to an identical garden seat due to arthritis escalating with Lyme disease. Continually must find new ways to do things, and accept that it will take more time.....but still gardening. Might have to raise some of my raised beds to enable easier access. My garden seat is identical to yours, except it is John Deer green. ( Makes me wonder if you painted yours to be International red...lol.) Be well and embrace the day!

In my experience, two of the hardest (most tedious) things to plant, weed and care for, are carrots and parsnips. Interestingly, as a 14-year T2 diabetic, I can tell you that parsnips have a higher glycemic index than carrots. I can't think of anything more delicious than a glass of fresh carrot juice made from freshly picked homegrown carrots. They saved Juiceman, Jay Kordich's, life. You're such a wonderful example for us, Danny, and God bless you for that! I have grown carrots before and discontinued them due to the amount of labor involved when the carrots are tiny. If you don't diligently take care of them when they are tiny, the weeds kill them. It is hard to differentiate between parsnips and Common Mallow (edible, I believe) when the plants are tiny. But, thanks to your ongoing example, I am going to try to acquire excellent carrot growing skills this year. They're just too delicious to pass up and remain unskilled. God bless you, Danny and Wanda! P.s. If you haven't ever tried it, Purslane (portulaca oleracea) is delicious in salads and is THE plant highest in natural EFAs. I should think it would grow in MS.

Sorry Danny, I had to laugh when you were scooting sideways on that roller seat 🙂! I do hope you get better soon though! I just got ride of my carrots in my greenhouse because they were infested with aphids. Carrots were only two inches longs after three months due to the infestation. Honestly, I ended up having to use "Seven" and aphid dust in order to get ride of them. I had tried, aphid traps, soap solution, Neam oil, etc. and nothing was working. The aphids were even on my plants that are supposed to keep aphids away! We accidentally introduced the aphids inside our greenhouse when my wife purchased two pots full of flowers and put them in the greenhouse to attract pollinating insects this last summer. It got to a point that I either spray some garden insecticide or loose all of my garden vegetables. Tough choice I know. I have already replanted and hopefully the infestation is gone. Carrots are good even in a 5b zone Danny. No need to pull them until you need them. Heads up brother. I leave mine in the ground until I need them in a 6b zone.

yep. we're 7a . Carrots stay in the ground, still in the ground... Tops do start looking rough but the carrots are fine. I do add a good layer of mulch if its going to get below 20. Wood sorrel is edible too ! 😁

@@mommat9390 They rot in our climate if left in the soil. Some make it but just split and ruin. Plus they get the little hair roots on them then they're no longer sweet.

That's funny. I love wood sorrel. We call it sourgrass. I've actually thought about setting aside a raised bed in a shady spot and moving all I find around the yard just to try to start a patch of it. I fi ally found a way to get carrots to germinate better for me, now I just need to get my timing right. I waited too long to thin, so all I have is tiny ones. I guess I have to pull them anyway

But I'm not totally independent of the world yet but I'm working on that goal. This year I'm going to try to raise all my own food,I've come close but not 365 days yet like your doing.

For the first ever , here in east tennesse , our carrots (and fall garden as a whole) continued to grow until JANUARY...uncovered...that is absolutely unheard of! Our seasons are definitely off!

I tried the Kuroda carrots this last fall up here in Oregon and they did great!!! So far, my favorite. In the Pacific Northwest, Portland area, our climate is generally wet and cold. Tons of cold rainfall, and some snow. The harvest was consistent, germination was awesome, and they performed well for fresh eating and canning.

The tops of mine still look good after two freezes. I’m very surprised 😮 I’m still thinning mine out because ours was planted a couple of weeks after yours so they aren’t ready yet. I did eat them with ranch dressing . I also stir fried the carrot greens.
