If you put a Mylar sheet or cut a flexible cutting board to fit the Carmel jig cutter, it would be simple to pull the sheet up to advance the Carmel. That’s how they cut soap . Look at the soap cutting jigs. They are very similar and soap is sticky like the Carmel. And there may be one of the soap cutters that would be faster, they work with similar square logs that have several sub cuts

Love the videos I'm from the UK. Just wondering..starburst chewy sweets in the UK were called opal fruits originally..I was wondering if in the USA they had them in the 60s 70s ? Also I think there was a spearmint version called pacers ..they had the same soft chewy texture like starbust but spearmint they were amazing and everyone who remembers them would love them back ! Could a spearmint flavour starburst shape and texture be made ? I'd love them and would sell in huge numbers x

Have you tried toasting the marshmallows for the bark? Spread them out and use a torch to lightly toast. Leather marshmallows cool so they aren't as smushy. Mix the toasted coconut into chocolate before pouring over marshmallows. Adds another layer of flavir.

When cutting the caramel after the first set of cuts why don't you put a couple stacked on top of each other in the miter box to cut into the skinny sizes? If sticking is an issue can you put a sheet of parchment paper in between the single square cuts? I would think this would save a step.
