To fry the “bananas” you need to use Yellow plantain for it to work, take really ripe yellow plantain cut it about 1 inch and fry them till Golden brown, regular bananas will NOT work. Update*** for people saying it works with bananas I understand that particular one is more on the dessert side. Plantains are more savory and so good with this recipe.

I don't know what feta was used for the pasta, but the first time I made it I used normal greek *style* feta which is made out of cows milk and doesn't get as creamy. For the best outcome you need proper Greek feta made from sheep and/or goats milk. Makes a _huge_ difference!
