you guys need probably much more alginate. I use it constantly in the lab and I am able to mix 1 gram in 100 ml of water and it is then a gel like liquid. It is still running. if you want it to become more solid you should go definitly higher in the amount. And just for fun alginate is a polysaccharide (sugar) that can be found in various algae. It accounts for up to 50 % of the dry weight of brown algae .

I love how they were surprised how frothy the soda was, when they are LITERALLY using a MILK FROTHER to mix! 😂 Mixing requires a spatula or beater whisk; they used a milk frother - a device known for creating froth from micro bubbles, to mix something to get all the bubbles out. 😆

Also if you ever do this again and want carbonation out of your soda. Place am Deflated balloon around the lip of the bottle. Might take some taping and patience but it will take all the carbonation out.
