Awesome job. I’ve been working on homemade Chipotle for 3 years. 1. Chicken thighs are a must for the chicken. 2. Best to make a marinade with chipotle chiles, oregano, oil (I use corn oil), lots of salt, vinegar, and black pepper. I marinate 24 hours or more. Yours is very close though. 3. I also love making the medium salsa. 4. I found the best chipotle burrito is all about the ratio of ingredients. I like heavy on the chicken and cheese, and easy on the rice, beans, salsas and sour cream. I dip quac on top. 5. I also steam my tortilla and then steam the fully prepared burrito.
