The upset stomach thing is not due to climate or spices, it's due to the different levels of food hygiene and water quality. It used to be bad in Spain until the 90s, but due to EU regulations it's now good, though I still wouldn't drink the tap water, except in the Canary Islands, which is safe, though it does have a very strong taste of minerals.
