On the vegan thing, I think the average vegan experiences this period of like a few weeks to a few months where it is tough. After that, it's really just second nature, and not even really too much of a challenge anymore. Especially if the ethical motivations drive you towards it. And on the expense thing, we usually think about things like plant-based meats and cheeses, and really direct alternatives to animal products. But most of what you will eat is things like lentils, tofu, nuts, bread, rice, potatoes, stuff like that. These things also happen to be some of the cheapest cost per calory foods out there in most places, to the point where being healthy on a sustainable / plant based diet is cheaper than being healthy on an omnivore diet in most high-income countries according to a recent Oxford study (not sure about Japan specifically!)
