I do a lot of fresh homemade fries in my deep fryer. 325 degrees for 5 minutes and then raise the basket and set the temp. to 375 then lower the basket for another 5 minutes. Great video thanks

My understanding is it depends on the fry, clean fry oil you can use it more times vs. dirty fry, which has more food particles.

Cut your fries. Wash them. Put them in ice water. About 30 min or longer. Rinse them again. Dry them thoroughly. Deep fry them on medium heat. Take them out. Let them sit on a kitchen paper/paper towel. Fry them ahain on high till golden brown.

If you strain the oil out and store separately, you can reuse. I've used up to 8 times depending on foods fried. (I wouldnt reuse sfter fush!). Double fry for chips. For very crispy, microwave 4 mins on high and shake to start breaking up the surface then double fry. Of course, all North America eats ridiculously over-sized portions hence you find it toonsmall. Elsewhere in the world, not a problem.

You are correct that people in North America have superior eating habits, but we also generally have bigger families. And I suspect most people only pull a deep fryer out for events and parties. So when your 6 friends are over for a game you want to be able to deep fry a lot of wings for them and your family. If its just me I am not going to go through the hassle of frying anything, especially with the clean up involved.

How to make Fries super crispy eh? - Well it takes few steps before but try soaking the freshly cut Fries first in an ice path for 20-30minutes just to get rid of excess starch, then towel dry them, Boil them in baking powder infused water 8 minutes, they should be at this point fluffy but still firm to fry. I recommend do this process before hand, cause you might want to freeze them first, to cut them to breaking down in the fryer. Oh yeah, Pro tip, add some duck fat in the fryer to get really infused taste palette.

The freeze really helps for peak fries, but i never plan ahead that far. And beef tallow rocks as well for a fry oil for that classic flavor.

In order to get the snap and a half crispiness out of fries... you must blanch them first, and pat them dry, before deep frying them.. enjoy!

You took points off for it being on a smaller side. But I think that small size is actually an advantage on an average kitchen. Apart from taking less space when not in use, this thing requires 4 litres of oil to operate-scrap-refill and so on. Imagine if you had to scrap and refill 6 or 8 litres of oil at once…My parents have this fryer and this is exactly the reason they are not using it, because even 4 litres of oil is too much… So, I would say the smaller size is actually an advantage for the average kitchen and adds points in versatility score because being less wasteful people will use it more. Also, precise manual temperature control adds another dimension in versatility in situations when you not just frying simple chips or wings. For example, I was making empanadas and had to find a perfect balance to have the meat filling inside cook properly yet not explode the pastry and loose all the juice, and have crispy outside at the same time. So With the combination of precise temperature control that this unit has and timing I was able to produce perfect final product. Also, I have Breville toaster-oven and have it on 60 degrees Celsius for when I’m doing batches of deep frying stuff. Keeps your already fried food warm until you are ready to serve. Keeps the plates warm too.

Soak your fries in water with a bit of white vinegar. Then cook for 2.5-3 min hang basket till dry then cook another 2.5-3min depending on your cut. Also don’t put salted foods back in oil you can use it till it’s dark and smokey. Make sure to filter it often to prevent crumbs from burning.

Maybe he'll read this, if so. . .Yo my dude, good video. Don't deep fry things in pure poison, it's not ideal in most cases. Use Peanut oil instead. Learn something new every day.

Not the average kitchen... didn't batter chicken . Didn't shake chicken or fries. Didn't double cook fries. For sauce dipped wings it should be battered and twice cooked to retain crispy crust with sauce on. Fish may be only thing you did close to right.

I've never understood the fascination with crispy fries. Real FRENCH FRIES are not crispy, they are not golden. They are soft, and they are brown. If you want crispy potato sticks, go to McDonald's. Definitely do not come here to Montreal because you will not get crispy fries in a decent burger joint.
