We headed to Ezītis Miglā, a small chain of cafes, restaurants, and bars in Riga, Latvia to see how they make their own, plant-based version of this Latvian classic. As far as I remember, my grandma in Riga didn't add any flour to her potato pancakes :) But she was of German-Latvian origin, perhaps, slavs do it differently
