Pork steaks over direct coals is one of the best bites in bbq. Really glad to see old school central Texas style cooking like that. I mop, which is kinda similar to the spritz

Can't beat that direct heat action, love the color on those pork steaks 👍 I asked Harry Soo about a mop sauce recipe and he told me he likes Apple Cider Vinegar, W Sauce, Butter, and a little brown sugar. I'm thinking of adding some onion and hot sauce to that recipe!

Love it man. I need more WSM videos too.😂. I've wanted to do cooks like thiz for a while on my WSM. Do u think it would be better at a lower temp like 250/275, or is hotter like u cooked at just fine.

Depends on what you’re looking for. This is definitely more like a grilled steak. The 250-275 is more of a smoked. Either way would come out great for sure.

It looks like you have the vents most of the way open. Is that correct? I am not going to open them that wide, but am trying to see how yours got to 385.

Yep, most of the way. You can always add more fuel to the fire if you want to get the temps higher as well.

Took somewhere between 2.5-3hours total. I think in all, I flipped them about 5-6 times. Appreciate the feedback!! Cheers!!

Do the pork steaks and chuck roast take about the same amount of time to cook?

Pound for pound, I’d say it’s close. So if they were each 2lbs they’d each take about the same time. But the pork steaks were less weight so they went quicker. Hope that helps.
