Hi Anja, I've used both here in Ireland. I agree that Weck jars are more dense and better in quality. I've never had Weck jars break in processing but have had a lot of mason/ball jars break, especially over the past 3yrs. I've now switched entirely to Weck and just use masonry jars for dry storage. Here the Weck jars are half the cost of mason/ kilner jars. I'd love to see the cake video please.

I have canned with both Mason and Weck jars. Personally, I've never had a Weck jar break during the canning process, but in recent years have had many Mason jars do so (all that broke were made in China). Both jars are valuable to have in our canning inventory. Thank you for sharing and introducing many to the beautiful Weck jars.

I have considered selling my Mason jars and switch over to the Weck completely . I am very excited to see your cake in the Weck jars ! Thank you for sharing information and knowledge. Very muchly appreciated. I have learned much and enjoy even more. Thank you.

I have both, though I don’t actually do canning. I just like storing in them, and I have to say if it weren’t for cost, I prefer the look of the Weck jars. (I only have the small tulip jars so far but want to add to the collection.) I forgot to look at your supply list before commenting, but in case it wasn’t mentioned, the clamps can also be bought separately. (I accidentally threw out a couple so found out the hard way.)

You can still get the clamps for the old Wecks in Denmark. I have antique Danish canning jars that are exactly like Weck that I use for canning. They are 110-115 years old and still going strong. Some of my rubber gaskets are well over 20 years old and still make perfect seals.

Anja, thank you for such an informational video. So interesting. I'll be checking out your jam-making videos. I can a few of several things (jams, jellies, salsa, applesauce, etc) and once I've used a lid for the Mason/Kerr jars, I save the lids and put them into a bag that is marked "used". I then use those lids when I am storing things in the freezer such as my broths, pestos...I've only used the Weck jars for dry storage because I've been so uninformed as to how to can with them. So cute to see the little kitty checking out what Mom is doing today!

"Einwecken" :-) My grandmother used to do this a lot when I was growing up and I finally started to do this again here in New Zealand my biggest problem is finding Jars and the "Einkochtopf"... at least now there is one company that brings Weck jars into the country... FINALLY... otherwise they have mason jars and agee jars here but finding a lid is a mission... I much prefer the proper weck jars with the glass lids...thank you for sharing this! Side note: there are other jars in Germany available as well though... and yes, you are correct that the procedure has been around since the late 1800's. We always had the whole cellar full of preserved fruit, gherkins, beans and all sorts of other things (my family had a Gaertnerei)...

I'm a proficient pressure canner. I can in both Mason and Weck (more rare just due to cost). During the pandemic it was hard to find the 'flats' and I had a ton. I pressure can a lot. Weck to the rescue. I am in no way what I consider a rebel canner. I follow the National Center for Home Preservation recommendations whether canning borracho beans or salmon. I do my best to research and err on the side of caution. I have found that I am able to reuse the rubber Weck seals IF I hand wash thoroughly. They do not like the dishwasher. I actually use a Sharpie marker each time I use them and 'tick' them. This gives me an idea on how many times said rubber has been used. Very helpful. Question: what do you use the tiniest Weck jar for? I have several but not entirely sure of its best canning (water bath) use. Thank you Anja!

I recently got two 1-liter Weck "tulip" jars. I LOVE them. I have large palms for a woman and due to an injury I got from a glass crack-popping into my finger decades ago causing me to have to get stitches I am SERIOUSLY concerned about being able to easily fit my hands into whatever I wash. The 1-liter Weck tulip jar is actually wider than I really need (i.e., I would be okay with the 3/4-liter or 1.5-liter Weck tulips jars which are not quite as wide), but they fit in my refrigerator door where I like to keep my sourdough starter. I really had to bite the bullet to buy these expensive jars but had a feeling I would want two and it saved just enough to buy two at a time that I could get myself to buy the two. I'm really glad I did. I have been using a quart Mason jar for my starter for years, but I'm so glad I got these!

I haven't tried canning with Weck but I will say that the jars keep things fresh longer than Mason jars. I buy heavy cream from a local farm. It has nothing added; no preservatives or thickeners. I used to put the cream in a Mason jar and keep it in the fridge but it always spoiled before I could use it up. With the Weck jars, the cream stays fresh. I did have to get use to the clamps and I wish the jars had spouts. Otherwise, I really love them. BTW, I have tried the method of inverting the jars when canning...works just fine. It's old school but it's a lot less time consuming and less messy than the other way. Do you use this system for the Weck jars?

I love my Wecks too. I pressure can and waterbath with them and they are much more reliable than other jar systems I've tried. By the way, the official recommendation is now 2 clips even for PC. I do use mason jars as well, for some ingredients and American recipes. Kind of like a homage to my American heritage. But the lid thing feels rather wasteful even though I reuse. While Wecks gaskets seem to hold up for ever, specially the medium and smaller lid sizes. So if durability is a criteria and you're looking at two model's with the same size, I'd recommend the one with the smaller lid.

Weck jars seem perfect for canning. My only reservation is I know my kids will drop the glass lids when getting jam. The Kerr jars are only a dollar each or less when they go on sale, but the single use lids are a deal-breaker. I can't think of many alternate uses for them and they aren't even recyclable. It's just too much waste.

Personally, I have found it is sometimes difficult to break the seal on Mason jars and I wind up using something to pry open a corner to break the seal. And then, the top is slightly bent. I am thinking of gradually switching over to Weck for canning, especially if the Mason jars are being made in China (some have reported more breakage recently with those) because I think the German quality is better. I can just about everything in Weck jars (living in Europe where Mason jars are uncommon and extremely expensive). I've learned that the Weck rubber gaskets are reusable. When washed and dried I store them in zip-lock bags so they won't dry out. I wonder if it's the FDA that recommends one time use or if Weck has the same guideline? I haven't been able to find any information in Europe that supports that the gaskets are not reusable... but maybe that information is available in Germany?

@@OurGabledHome My reply from yesterday was somehow removed... However, in the meantime, I did hear back from Weck (as I had sent them an email from their website), and here is what she shared: "The small percentage detected is minimal and migration into the food impossible. The German food and drug administration responsible for food safety is testing the composition of the glass mixture, as well as the rubber ring. Total elimination of lead in the glass is not possible. The J Weck company in Germany has been in the food preserving business for over 100 years and takes food safety very seriously." Based on some Amazon reviews and replies to questions others asked on Amazon about lead, I feel confident this is an accurate statement, and that these are still high quality jars. I will be placing an order soon on their website for some juice jars to add to my collection! Blessings to you - Merry Christmas!

Lol, I bet the Weck jars have been researched in countries using metric and weck jars. Somewhere in Europe there has to be somebody willing to pay for that research.

Weck jars seem objectively better but its way more expensive

Oh no. A cat is in the house. He will knock over jars he doesn't like. The Mason lids seem somewhat overpriced for what they are. They might not come off undamaged for reuse. The manufacturer can get away with this because hobbyists and rich farm owners can afford them. They've got the USDA onboard too. $.$ Twist-off lids are bought by corporations and they will save pennies where they can. Wasting a lid on a small jam jar or low value watery product is too much. Weck jars seem much more economical. Tool-less opening is also handy. I've never handled such jars. When you clamp them down, how do you boil one in a pot? Wouldn't it blow when the steam can't vent around the edges? My understanding is that a normal lid will lift on overpressure.
