Also a fun fact about Caribbean weddings. Food is always served towards the end because if not, once they're tummies are full, the wedding is done and everyone goes home by 6:30,7pm.

Where can I put the Bouquet and Garter toss if I want to change in another dress before the dance. Maybe change when everyone is eating as my wedding dress is a ballgown and I want to dance in something else.

There are two possibilities, not having experience with this tradition, I would suggest, to change back to the dress you want, option 1... or To do it before you change, but that may not work if it's too early in the event.

If you're going to do the shoe game, my suggestion would be during dinner, or towards the end of dinner, before the toast... another option would be after some dancing, and right before you do the bouquet and garter toss...
