Wedding soup
Ingredients list:
500 g boned beef
One onion
two bay leaves
three tablespoons of flour
Three tablespoons of yogurt
one lemon
One egg yolk
two tablespoons of butter
A teaspoon of ground red pepper
a pinch of parsley
12 glasses of water in total
2.5 coffee spoons of salt
Preparation:
After resting the meat in cold water for 1 hour, we wash it and put it in the pressure cooker, add one onion juice and salt and cook it in the pressure cooker for 1 hour.
We take the pressure cooker into the sink and run cold water on it and by cool it quickly.
We open the lid, we take the meat inside the pot, after it cools down, we shred it into small pieces in our hands, put some olive oil in a saucepan, add the flour, roast it for 3 minutes. Add broth and seven cups of hot water, the consistency of our soup becomes fluid and it starts to boil. We add our meat and salt. Meanwhile we prepare a dressing with yoghurt, lemon juice and egg yolk. We take a piece of soup's juice and add into the dressing as we show in the video. Make it warm and then into the soup. We check the consistency and boil it a little more, melt the butter and add powdered red pepper into it. We pour our soup into the serving dish and add some butter sauce on it that we've prepared. I forgot to chop parsley, it'll be more delicious if you do and sprinkle on it. It will be a more colorful dish. I hope it will be healing for you.
