I use this also and it comes out great. Ive been following mike for 6 years and hes great. Very easy to follow and i always come here for no fail ways to cook. Meat is too expensive to ruin it. But we appreciate you, happy Thanksgiving!

I started using the Kosmo’s Q brine because of your previous video using it. I have never hung the turkey but I do use the internal turkey cage to hold it upright in my cabinet smoker and it always turns out perfect!

I'm about to pull the trigger on a vertical, but can't find a series 3 anywhere to actually assess the interior size. Will a series 3 rack fit a whole rack of baby back ribs? What about a whole 12 to 14 pound shoulder? For a family of 3 is the series 5 really needed? It'd be nice to fit a family size Papa Murphy's pizza in one on my pizza stone. Our local TSC has the 3 and 5 for the same price, but only the 5 is in stock for pickup today.

Did the turkey temperature rise any as it rested? I did a prime roast in my 55 gallon barrel smoker the other day and pulled it out at 125° and in the 45 minute rest it raised to 132°

If you think that brine is good on a turkey you need to try high mountain brown sugar brine and traeger apple honey rub. It's amazing

Did it taste salty? Cause I want to use kosmos brine, but at 9,000 MG of salt is extremely high in sodium. That’s the only reason I’m hesitant on buying it

Well, it is a brine. If you were to do a 50/50 salt/sugar brine,(my usual mix) the total salt content of that would be high as well. Of course not all of the salt gets absorbed into the meat plus rinsing off the bird after the brine removes surface salt. Don't be scared! Give it a try. I don't get an over salted taste on any of the many turkeys I have brined before. When resting after the brine in the fridge, I leave the bird uncovered. This promotes an even crisper skin.

You rinse the brine off. If it turns out salty, it was brined too long or wasn't well rinsed.
