I made 11 quarts of chicken stock yesterday and pressure canned it today. It is so good! Used three carcasses from the chicken I get from a local farmer and one carcass from a Sam's rotisserie chicken. I love keeping my home grocery store well stocked with home canned foods. I make potatoes in the Instant Pot as well but I put a mesh basket in and only use one cup of water. It steams the potatoes rather than boils them so they are not waterlogged. Makes for very fluffy mashed potatoes.

Oh Audrey! I know how anoying thyroids can be, I have nodules also , but thankfully no cancer! I have Hyper one! Been 4 yrs now, and have done like 4 biopsy. Wish you well with it!
