love the video! just a little tip for the carbonara (which already looks delicius, but my Italian self had to say something ahaha): if you mix the eggs with a little bit of cooking water from the pasta there will be more of a jucy sauce that will incorporate much better the pecorino (bc i'm sorry but carbonara=pecorino) and it won't become a frittata. i'm not an expert for sure and even here in Italy everybody does it differently, but I thought that it could help… sorry for the rant, love from Rome
