About the growing of the food during the beginning: It's called, chunk loading, where an area around a player is loaded and nothing beyond that perimeter, to prevent lag. So while kootra was standing close to dan's farm, his was growing and jame's farm was to far away from the loaded chunk around the player.

The server progresses when it is online, but the chunks are only loaded when a player is near. Wheat will not grow in unloaded chunks. The only chunks which are loaded at all times are the ones at the spawn.
