Founded in 2003, Ecole Chocolat Professional School of Chocolate Arts offers a portfolio of programs for chocolate making -- mastering techniques while gaining the expertise and business knowledge needed to become a professional chocolatier or chocolate maker. Founder Pam Williams received the 2011 Fine Chocolate Industry Association's Recognition of Excellence in Service to the Industry.

-[Pam] Welcome to Ecole Chocolat;
a culinary school dedicated to chocolate making.
I’m Pam Williams, Founder and Lead Instructor.
-[Alysha] And I’m Alysha Kropf, Program Director.
Do you love chocolate?
Are you looking for a new hobby,
or even a new career?
-[Pam] We teach you the knowledge and skills
of the art and science of chocolate making.
All online.
Our students come from all over the world.
You can learn on your own schedule
using your computer, tablet, or smartphone.
Our curriculum is a mixture
of instructions, videos, and interactive assignments including recipes.
-[Alysha] Your tutors will be with you every step of the way
to guide you through the programs, answer your questions,
and give you feedback.
And you’ll have fun sharing this learning experience
with your classmates from all over the world.
Those beautiful chocolates that you drool over on Instagram,
you can learn to make those yourself.
-[Pam] Through our professional chocolatier program,
you’ll learn techniques such as tempering.
-[Alysha] And if you don’t know what that means yet,
don’t worry, you will soon.
-[Pam] Molding, dipping, and the latest decorating techniques.
You’ll learn to make many different types of chocolates
including truffles, molded chocolates, and filled chocolates.
-[Alysha] You may have heard of craft chocolate, or bean-to-bar chocolate.
Through our Chocolate Making from the Bean program,
you will learn how to make chocolate from scratch
using dried cocoa beans.
-[Pam] From how to find cocoa beans,
to every step of the production process,
you’ll learn how to draw incredible flavors
out of those cocoa beans
to make great chocolate.
-[Alysha] You may be thinking,
“How can I learn about chocolate making online?
Couldn’t I just find some videos myself,
or would I learn more in person?”
It's true, there is a lot of information available online,
but our programs are more comprehensive
than anything you could find searching by yourself.
-[Pam] We also love learning in person.
But those programs are usually short,
and focused on techniques.
And then, you are left all on your own.
Our programs teach you techniques,
but also give you a wealth of knowledge
in chocolate chemistry, production processes,
and opening your own business.
Our programs are two or three months,
giving you lots of time
to study, research, and practice.
-[Alysha] Our instructors are leading experts in the field
and share their wealth of knowledge with you.
Our online learning center gives you the opportunity
to interact with your instructors and your fellow classmates
whenever works for you.
There’s no specific times that you have to be online.
-[Pam] I’ve been involved in the chocolate industry for over 35 years.
First as owner and master chocolatier of my own chocolate business.
-[Alysha] Well and I’ve also been involved in the chocolate industry for 35 years.
That’s because Pam is my aunt
and when I was a little girl I used to love
to come and help at her chocolate shop.
-[Pam] I’ve learned lessons the hard way, the expensive way.
We give you the knowledge you need to avoid those pitfalls,
and set up your business for success.
